Summer is almost here, and that means it’s nectarine season! I absolutely love the sweet, slightly tart, and juiciness you get from fresh ripe nectarines. They are perfect for summer salads, for fruit bruschetta, and for adding to smoothies.
I love the sweet & salty combo of this salad. The peaches pair so nicely with the bitterness of mixed greens, the crunch of the pistachios, and the tanginess of feta cheese. This salad is elegant enough to serve as a starter for a dinner party, and easy enough to make if you want a fancy lunch at home!

What’s The Differences Between Peaches Vs Nectarines
While peaches and nectarines are genetically similar, peaches have fuzzy skin while nectarines do not, and have a smooth skin. They have a similar taste, as well as similar amounts of sugar, fiber, and nutrients – but the skin texture differs between the two.
Both peaches and nectarines are high in Vitamins A & C and fiber, making them a great fruit to enjoy. Plus they taste wonderful in both sweet and savory dishes. If you can find fresh ripe peaches or nectarines, enjoy them both!

- Mixed Salad Greens – I like a good mix of savory, juicy, bitter greens with lots of variety for this salad! #NoBoringSalads
- Nectarines– Fresh, ripe, summer peaches are perfect for this recipe. You can also use peaches too. I haven’t tried this recipe with frozen (and thawed) or canned peaches, so if you do please comment below on how it went, I’d love to hear from you.
- Feta Cheese – I used a crumbled feta for this recipe, but you can also use a block of feta cheese, mashed with a fork before adding to the salad.
- Pistachios – I shelled my own 🙂
- Good Extra Virgin Olive Oil: I like to use this fruity olive oil which has a fantastic flavor and deep color- it’s inexpensive & I like to keep a few liters stocked up in my pantry.
- Sunflower Oil: our go-to oil for everything, it has a neutral mild flavor, great for salad dressings, roasting, or grilling!
- Apple Cider Vinegar: which gives this dressing a little extra tang! There are great benefits to apple cider vinegar with the mother aside from it’s fantastic flavor. I think it gives a nice extra sweetness and depth.
- Garlic
- Honey: We use our own honey, straight out of the beehives! As beekeepers, we have plenty of raw honey so I try to use it in all my recipes instead of sugar. I’d recommend trying a local farmers market to find the best raw honey in your area. Or else, this raw organic honey online here is the next best thing.
- Salt & Pepper
How Do You Make a Savory Salad with Peaches or Nectarines?
- In a large salad bowl, add washed mixed salad greens. Top with sliced peaches, feta cheese, and shelled pistachios.
- In a small bowl or mason jar, add the salad dressing ingredients: olive oil, sunflower oil, apple cider vinegar, garlic, honey, and salt. Mix well until dressing is well combined.
- Pour dressing over the salad. Add the fresh cracked black pepper to the salad, and toss well. Serve immediately, and at room temperature.
Dietary Modifications & Substitutions
- This recipe is vegetarian. To make vegan or dairy free, omit the feta cheese and use a vegan plant-based crumbly cheese instead.
- This recipe is gluten free, but please ensure that all ingredients you use are certified gluten free before adding.
A No-Cook Summer Salad Recipe
This no-cook nectarine salad is a quick and simple appetizer or side dish with dinner. I love a good no-cook recipe for those days when I don’t feel like standing around the stove, or for summer nights when it’s too hot to cook. This salad comes together in about 10 minutes, and doesn’t require the stove or microwave to make. Just use a few fridge & pantry staple ingredients and you have a yummy meal ready in no time. And very little to clean up afterwards… an added bonus!

- 8 ounces mixed greens
- 2 nectarines pits removed, and sliced
- 2 ounces feta cheese
- 1/2 cup pistachios shelled (just the nut meats)*see note below
- 2 tablespoons olive oil
- 2 tablespoons sunflower oil
- 2 tablespoons apple cider vinegar
- 2 cloves garlic minced
- 1 tablespoon honey
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- In a large salad bowl, add washed mixed salad greens. Top with sliced peaches, feta cheese, and shelled pistachios.
