This nectarine salad with feta cheese recipe is a bright, fresh, and sweet salad made with fresh ripe peaches, tangy feta, pistachios, and a 5-minute homemade vinaigrette dressing! A fantastic sweet and savory salad recipe that is perfect for summer.
1/2cuppistachiosshelled (just the nut meats)*see note below
2tablespoonsextra virgin olive oil
2tablespoonssunflower oil
2tablespoonsapple cider vinegar
2clovesgarlicminced
1tablespoonhoney
1/2teaspoonSea Salt
1/4teaspoonblack pepper
Instructions
In a large salad bowl, add washed mixed salad greens. Top with sliced nectarines, feta cheese, and shelled pistachios.
In a small bowl or mason jar, add the salad dressing ingredients: olive oil, sunflower oil, apple cider vinegar, garlic, honey, and salt. Mix well until dressing is well combined.
Pour dressing over the salad. Add the fresh cracked black pepper to the salad, and toss well. Serve immediately, and at room temperature.
Notes
*When I lived in California, there was a great chain of grocery stores called Sprouts near me where I did almost all of my shopping. They had a bulk section with shelled pistachios, which they labeled as 'pistachio nut meats' and to this day it still cracks me up and I will 100% forever call them that. If you can only find the shelled pistachios, then shell them yourself - that's what we do now!
