This smoked potato salad recipe (with or without mayo) is a home run summer side dish, made in the electric smoker. This easy recipe is made with potatoes, bell pepper, and chopped celery, in a tangy dressing.

This easy potato salad in the smoker is a great recipe to make if t your next cookout. Our friends gave us an electric smoker for a housewarming gift, and it has been great to smoke amazing things that aren’t meat. We’ve smoked some really fun recipes like deviled eggs eggs, tofu, and even Cheese-Itz (highly recommend!).  All taste amazing, and you can do so much with an electric smoker besides meat.

Make The Best Potato Salad in an Electric Smoker!

We love using our electric smoker for for all kinds of foods.  We do brisket, pork tenderloin, ribs, smoked salmon… and even some vegan and vegetarian recipes as well. We’ve smoked some really fun things vegetables, chips, and even pancakes (yep, they were great!).  All taste awesome, and you can do so much with an electric smoker besides meat.

If you don’t have a smoker, you can use a charcoal grill or pellet grill (or Big Green Egg). We add some smoked wood chips to the grill, add the potato salad, and let it absorb some great smoke flavor.

What’s In This Smoker Potato Salad Recipe?

Potatoes, Bell Pepper, Celery, Green Onions, Dill

  • Whole Grain Mustard – for a really nice flavor and texture, I love this fancy Whole Grain Mustard.  Using a really good mustard makes all the difference, so don’t use the basic yellow stuff for this recipe.
  • Apple Cider Vinegar, which gives this dressing a little extra tang which is really fantastic!
  • Extra Virgin Olive Oil
  • Tellicherry Peppercorns: It’s amazing the flavor difference you can get with really good tellicherry black pepper. 
  • Classic MayonnaiseI like to use this classic mayo for a delicious and creamy flavor. I add the mayo at the end of this recipe, after I take the potatoes out of the smoker. You can substitute Greek yogurt if you don’t love mayo.

Other Optional Add-Ins

  • Hard-Boiled Eggs
  • Red Onion
  • Dill Pickles
  • Chili Powder
  • Liquid Smoke – If you don’t have an electric smoker, you can use liquid smoke. It’s a spice that gives your dishes a hint of smoke.
  • Smoked Paprika for a nice spicy finish.

Best Potatoes for Smoked Potato Salad

I used yellow potatoes or Yukon golds, but you can use any variety you prefer. I find russet potatoes soak in dressing well, so those can be a great option.

Red potatoes bring a nice creaminess to the salad. You could even try sweet potatoes for a new twist.

Make Smoked Potato Salad Vegetarian for an Easy Side Dish

How Do You Smoke Potato Salad?

  1. Set Smoker: to 275 degrees Fahrenheit.
  2. Cut & Boil Potatoes: Cube potatoes into small 1/2 inch cubes. Place into a large pot and cover with cool water. Bring potatoes to a boil for 7 to 8 minutes until potatoes are halfway cooked almost fork tender.  Drain potatoes, and place into a large bowl.
  3. Toss & Season: Toss the potatoes with celery, bell pepper, apple cider vinegar, Dijon mustard, olive oil, salt and pepper, and fresh dill. And place in a smoker-safe container (we use aluminum lasagna trays).
  4. Smoke: Place tray in an electric smoker (or BBQ set at) 275 degrees Fahrenheit, and cook for 2 to 3 hours or until potatoes can be pierced with a fork.
  5. Add Garnishes – Remove tray carefully from smoker. Add mayo (if using) and top with fresh parsley before serving.
  6. Serve along side any other smoked entrees, dishes from the BBQ, or grilled favorites.

Make Ahead Potato Salad for Entertaining

Ingredients
