I’m all about saving, reusing, or repurposing as much as I can in my kitchen. This smoked brisket gravy is the perfect recipe to repurpose something you may be tempted to throw out. Instead of tossing the brisket fat in the compost or garbage, you can repurpose it into a delicious and flavorful gravy. I’m all about saving anything I can from my kitchen, and this sauce is a great way to avoid letting food go to waste!

- Brisket Drippings: we used smoked brisket drippings as the base of our gravy. But you can use oven roasted brisket as well. The gravy will take on the flavor of the marinade, rub, or brine that you flavored your brisket with. We did a spicy brown sugar rub on the brisket, which made a really nice smoky almost BBQ taste to the gravy.
- All Purpose Flour: I normally use King Arthur organic all purpose flour for all my recipes, I love the consistency and texture this flour produces. If you are gluten free, then substitute a certified gluten free flour in this dish.
- Spices: The gravy will take on any flavor that you added to the meat. I’d recommend this brisket rub which will give your gravy a really nice flavor.
- Reduced Sodium Vegetable Stock or Bouillon: I love this low sodium vegetable base for my recipes because it has a great flavor and is lower in sodium. I only develop my recipes with low sodium ingredients so the ingredients shine. You can always add salt to a recipe if it needs it, but it’s almost impossible to take it out! By starting with a low sodium broth or bouillon, you can build bright vibrant flavors and add more salt later if needed.
- Pink Himalayan Sea Salt: I like to use a pink Himalayan Sea Salt in my kitchen, which has more natural minerals than plain processed table salt. It’s fairly inexpensive, so I’d recommend this salt if you’re looking for an easy way to level up your spice pantry.
- Tellicherry Black Pepper: Like the salt, it’s amazing the flavor difference you can get with really good tellicherry black pepper. This pepper is the same price is buying pre-ground, and has a million times more flavor! I use these really great tellicherry peppercorns, which I would definitely recommend.

How Do I Make Gravy from Brisket Drippings?
- Take the cooked brisket from the oven or smoker. Remove as much fat as you can from the drippings.
- In a saucepan, heat the brisket drippings over low heat until melted. Slowly whisk in the flour, 1 tablespoon at a time until the gravy begins to have a noticeably thick consistency. If you need to add liquid to your gravy, add vegetable stock, one 1/4 cup at a time. It should resemble the texture of maple syrup.
- Never stop whisking, and always make sure the flour is completely dissolved before adding the next spoonful.
- Once the gravy has a nice texture, taste and adjust seasonings as necessary, adding salt, pepper, or spices like rosemary or thyme if desired.
- Pour gravy over meat, over mashed potatoes, or crispy potato wedges. Mangia!

- Himalayan Sea Salt and Pepper to Taste

I had been cooking my brisket in a slow cooker for 2 days. Today I decided to make garlic mashed potato with the brisket and needed gravy.
