The beans in this recipe are made with some of our favorite Italian style beans. We love serving this bean salad with fresh steamed green beans, canned chickpeas, green lentils, and navy beans. These four beans add a really nice flavor and texture contrast in each bite!

The bruschetta-style dressing is made with chopped tomatoes, garlic, white wine vinegar, sugar, olive oil, and fresh italian seasoning, salt, and pepper.

We also finished this dish with fresh herbs like chopped parsley and basil. Both of those give this salad a really nice flavor profile. We also add a little feta cheese for a briny finish.

Additions and Substitutions

Omit the cheese for a vegan version. Or use a plant-based cheese instead. As a replacement for feta, you could also add some freshly shaved Parmesan Romano cheese.

Instead of a homemade bruschetta, you could stir in a store-bought bruschetta if you prefer. Just be sure to add a little extra olive oil or vinegar after tasting if the bean salad needs it. 

You could try making this bean salad with other varieties of beans. A more classic three bean style salad with chickpeas, green beans and kidney beans would also work well. Or try adding in black beans pinto beans, or cannellini beans instead of navy beans.

Step 1: In a large mixing bowl, add the chickpeas, lentils, and navy beans.

Step 2: In a separate bowl, mix the chopped tomatoes, garlic, white wine vinegar, sugar, olive oil, Italian seasoning, salt, and pepper. Pour this bruschetta mixture over the beans.

Step 3: In a small pot with a steamer basket, steam the trimmed green beans until tender and drain them well.
