It’s officially fall here, and that means our kitchen is full of fun and delicious squash recipes!  This delicata squash pasta recipe is a cozy and flavorful dinner with simple roasted squash and vegetables, and tossed with a bright and dreamy sage lemon sauce.  It doesn’t get more fall than this!

One of the great things about this roasted squash pasta is that it can easily be made vegan by using plant-based butter. And it’s gluten free if you are using GF pasta. There are so many amazing diet-friendly ingredients out there nowadays, this recipe can be customized for everyone at your table.

This delicata squash pasta recipe is the tastiest, coziest fall dinner meal. It’s perfect for a hearty meal for the family, and also great to make for company if you are having guests for dinner.

It makes a great holiday dinner idea as well. The oven does most of the work, so you can enjoy hands-off time while you prep sides or a salad!

How Do I Make Delicata Squash Pasta?

  • Prep the Squash – preheat oven to 400 degrees Fahrenheit. Remove seeds from squash and slice. Place squash on a sheet pan and toss with sliced onion, olive oil, salt and pepper. Roast for 30 minutes, flipping halfway.
  • Cook the Pasta – while the squash is roasting bring a large pot of water to a boil. Cook pasta according to package instructions. Drain, and set aside.
  • Make the Sauce – in a large pot, heat the bitter over low heat. Add the garlic and sage leaves and cook for 5 to 6 minutes until the garlic begins to brown. Add the pasta, roasted squash and onions, and stir well to o combine. Squeeze the lemon juice over the pasta and garnish with fresh chopped parsley.

Ingredients
  

  • 1 medium to large delicata squash de-seeded and sliced
  • 1 tablespoon olive oil
  • 1 medium sweet onion sliced
  • 1/4 teaspoon Sea Salt
  • 1/4 teaspoon Black Pepper
  • 8 ounces pasta gluten free, if desired
  • 2 tablespoons butter
  • 6 cloves garlic minced
  • 1 tablespoon fresh sage leaves chopped
  • 2 tablespoons all-purpose flour
  • 1 cup milk

Instructions
