This pretzel breakfast sandwich is what I call an Easy Weekend Meal – which is on your table in under 30 minutes.  These quick and simple recipes are perfect for those days when you want a healthy homecooked breakfast but don’t want to spend hours in the kitchen. Ingredients
  

  • 2 pretzel buns sliced in half
  • 2 eggs
  • 2 slices fresh tomatoes
  • 2 tablespoons dairy free cream cheese or hummus spread
  • 1 cup alfalfa sprouts
  • Other Topping Ideas: Avocado, Bacon, Ham, Bell Pepper, Pineapple, Cheese Slices, Hummus

Instructions
 

  • Toast the slices of brioche until they are golden brown.
  • Cook eggs according to your favorite method (scrambling, over easy, poached, etc.)
  • On each sandwich, spread 1 piece of brioche bread with 1 tablespoon of cream cheese. Add the slice of tomato, fried egg, and alfalfa sprouts on top. Add any other toppings above that you love, and mangia!
