This avocado sprouts toast is one of my favorite weekend brunch recipes! It’s simple, healthy, satisfying, and a great morning meal to start the day. I usually bake a loaf of bread each Friday afternoon so we can enjoy it on sandwiches and toasts on the weekend (my 4 Ingredient No Knead recipe is a classic, as is my Guide to Sourdough). I like to broil the bread for extra crunchiness, load it with a creamy and perfectly spiced avocado mixture, and top it with fresh crunchy sprouts. No better way to start the day!
This Avocado Toast with Sprouts Recipe Is:

Grow Sprouts Indoors for A Nutritious Crunch All Year Long!
I grow my own sprouts all year long on my kitchen counters… and believe me, it couldn’t be easier! All you need are some sprouting seeds (I like these alfalfa seeds, and these bean sprouts), wide-mouth mason jars, sprouting lids, and some tap water. An endless supply of sprouts will be at your culinary fingertips anytime. I love grabbing a handful of alfalfa sprouts to add to a sandwich or a wrap, or adding a handful of bean sprouts to stir fries or ramen soup. I put together a list of all my favorite sprouting supplies – so you can enjoy fresh sprouts any time!
What’s In this Avocado Sprouts Toast Recipe?
- Sandwich Bread – use a gluten free bread if you can’t eat wheat. I like to make my own bread, and they have some great artisan bread gluten free mixes out there too!
- Ripe Avocado
- Actually GOOD Bottled Lemon Juice: Use fresh lemons if you have it, or this really great bottled lemon that you can keep in your pantry if you don’t have fresh lemons. This organic lemon is great for dressings, dips, and even cocktails – and it tastes fresh, which is great to have around if you don’t use lemon juice everyday but still want to keep some around.
- Garlic: I use fresh garlic when I have it, and this great jarred organic garlic when I don’t have fresh. It’s actually super convenient to have pre-chopped garlic on hand for quick and easy meal prep.
- Montreal Steak Spice: Our favorite spice blend, probably the one we use most in our home! Montreal Steak Spice is a blend of garlic, pepper, salt, oregano, crushed pepper flakes, and a little dill for an amazing flavor. With a half-Canadian household, you better believe we put this spice on everything!
- Red Chili Pepper Flakes: for a little heat! I like to add a few shakes to this recipe to give this dish a nice complex depth of flavor.
- Sprouts (I used alfalfa)
- Pink Himalayan Sea Salt: I like to use a pink Himalayan Sea Salt in my kitchen, which has more natural minerals than plain processed table salt. It’s fairly inexpensive, so I’d recommend this salt if you’re looking for an easy way to level up your spice pantry.
- Tellicherry Peppercorns: Like the salt, it’s amazing the flavor difference you can get with really good tellicherry black pepper. Amazon has a generic brand tellicherry peppercorn which is the same price is buying pre-ground, and has a million times more flavor… so I use these really great tellicherry peppercorns, which I would definitely recommend.

A Great Clean-Out-The-Fridge Breakfast Recipe!
This avocado sprouts toast recipe is the perfect vehicle to use up any sprouts, spreads, dips, or veggies you have on hand. Add your favorite ingredients between the avocado and sprouts and enjoy! I always mash avocados when my avocados are a little overripe and don’t slice as well. You could add a little roasted bell pepper or green onion to this recipe as well – the possibilities are endless!
How Do I Make Crunchy Avocado Toast with Sprouts?
- Place slices of bread on a sheet pan, and place in the oven. Broil the bread over low heat until it is crispy and toasted on each side (my oven is about 2-3 minutes each side). Always watch the bread as your broil it so it doesn’t burn.
- In a large bowl, mash the avocado, lemon juice, garlic, Montreal steak spice, and chili flakes.
- Top each slice of oven-toasted bread with half the avocado mixture, and top each toast with 1/4 cup sprouts, and a sprinkle of salt & pepper.
