I love a satisfying and filling breakfast sandwich that is low in carbohydrates, high in fiber, and loaded with flavor!  This keto smashed egg sandwich recipe is the perfect breakfast sandwich to start the day off right. I used this low carb bread (2 net carbs per slice!) as the base for this fantastic vegetarian keto breakfast sandwich.

I smashed the eggs, added the spices, and piled the sandwich high with sprouts to finish. This sandwich is great open-faced or closed, totally your call!

If you are on a ketogenic diet or choose to eat low carb, it can be difficult finding meatless meal ideas for breakfast… or any time of day!  This smashed egg breakfast sandwich recipe is both plant-based and low in carbohydrates, making it a great and tasty choice for breakfast.  Start your day off with a fresh and satisfying meal that will keep you full – without the carbs.

  • Eggs – I hardboiled my eggs using my easy-peel method, which makes perfect hardboiled eggs every single time!  No more struggling with the shells or having your egg whites fall apart… this method is foolproof and I’ve made perfect hard-boiled eggs hundreds of times.  Seriously!  You could also make this recipe with poached or scrambled eggs, whatever you favorite is.
  • Low Carb Bread: OK, this bread is the closest thing to magic I’ve tasted in a while – high in fiber and low in carbohydrates, this seeded bread is the perfect addition to a plant based breakfast!
  • Lime Juice
  • Red Chili Pepper Flakes: for a little heat! I like to add a few shakes to this recipe to give this dish a nice complex depth of flavor.
  • Garlic Powder: Also a major pantry staple ingredient that gets used in our house daily! I love this garlic powder and add it to a lot of recipes that I would use fresh garlic in too.
  • Sprouts – a simple and delicious way to add some freshness and crunchiness to this sandwich. The sprouts are light and refreshing, and are so simple to grow at home using a kit like this.

How Do I Make This Low Carb Mashed Egg Sandwich?

  1. Prepare the eggs: I used my easy method for hard-boiling eggs here – but you could also poach or scramble them if you prefer. I find hardboiled eggs are great to meal prep for the week so if I have any extras by the weekend, this is my go-to low carb brunch idea!
  2. Toast the bread: place the low carb bread in the toaster until golden brown.
  3. Assemble the sandwich: to the toast, add the peeled hardboiled eggs and mash with a fork directly onto the toast.  Squeeze the fresh lime juice and top with red chili flakes, and garlic powder.
  4. Add sprouts: top with a pile of fresh crunchy sprouts (or other low carb and keto vegetables of your choice!)
  5. Salt salt and pepper if desired, and enjoy!

    My favorite sandwich growing up was scrambled eggs. My mom always made it with mayo ketchup and dill pickles. Today this is my favorite go-to meal when we are short on groceries. Everyone else thinks it’s weird but the ketchup and dill pickles make it pop!
