What’s In This Smashed Egg Sandwich Recipe?
- Eggs – I hardboiled my eggs using my easy-peel method, which makes perfect hardboiled eggs every single time! No more struggling with the shells or having your egg whites fall apart… this method is foolproof and I’ve made perfect hard-boiled eggs hundreds of times. Seriously! You could also make this recipe with poached or scrambled eggs, whatever you favorite is.
- Low Carb Bread: OK, this bread is the closest thing to magic I’ve tasted in a while – high in fiber and low in carbohydrates, this seeded bread is the perfect addition to a healthy and plant based breakfast!
- Lime Juice: If you don’t have fresh limes, this bottled lime juice is actually a fantastic substitute. I always keep some in the pantry – it’s great for sauces, dips, or even for cocktails!
- Red Chili Pepper Flakes: for a little heat! I like to add a few shakes to this recipe to give this dish a nice complex depth of flavor.
- Garlic Powder: Also a major pantry staple ingredient that gets used in our house daily! I love this garlic powder and add it to a lot of recipes that I would use fresh garlic in too.
- Sprouts – a simple and delicious way to add some freshness and crunchiness to this sandwich. The sprouts are light and refreshing, and are so simple to grow at home using a kit like this.
- Pink Himalayan Sea Salt: I like to use a pink Himalayan Sea Salt in my kitchen, which has more natural minerals than plain processed table salt. It’s fairly inexpensive, so I’d recommend this salt if you’re looking for an easy way to level up your spice pantry.
- Tellicherry Peppercorns: Like the salt, it’s amazing the flavor difference you can get with really good tellicherry black pepper. Amazon has a generic brand tellicherry peppercorn which is the same price is buying pre-ground, and has a million times more flavor… so I use these really great tellicherry peppercorns, which I would definitely recommend.
Grow Sprouts Indoors for A Nutritious Crunch All Year Long!
I grow my own sprouts all year long on my kitchen counters… and believe me, it couldn’t be easier! All you need are some sprouting seeds (I like these alfalfa seeds, and these bean sprouts), wide-mouth mason jars, sprouting lids, and some tap water. An endless supply of sprouts will be at your culinary fingertips anytime. I love grabbing a handful of alfalfa sprouts to add to a sandwich or a wrap, or adding a handful of bean sprouts to stir fries or ramen soup. I put together a list of all my favorite sprouting supplies – so you can enjoy fresh sprouts any time!
How Do I Make This Low Carb Mashed Egg Sandwich?
- Prepare the eggs: I used my easy method for hardboiling eggs here – but you could also poach or scramble them if you prefer. I find hardboiled eggs are great to meal prep for the week so if I have any extras by the weekend, this is my go-to low carb brunch idea!
- Toast the bread: place the low carb bread in the toaster until golden brown.
- Assemble the sandwich: to the toast, add the peeled hardboiled eggs and mash with a fork directly onto the toast. Squeeze the fresh lime juice and top with red chili flakes, and garlic powder.
- Add sprouts: top with a pile of fresh crunchy sprouts (or other low carb and keto vegetables of your choice!)
- Salt salt and pepper if desired, and enjoy!
