It’s huckleberry season on our homestead, and I’ve been whipping up fun, new recipes with our berry bounty this summer!  These huckleberry waffles are a delicious breakfast huckleberry recipe and taste absolutely amazing with this fresh jam. 
 
Since huckleberries are closely related to blueberries, this recipe has tons of classic nostalgia flavor, make an amazing weekend brunch, and can be made with fresh or frozen huckleberries. Grab your waffle maker, and tuck into these delicious and fluffy waffles.

What Ingredients Do You Need To Make Waffles with Huckleberries

  • Huckleberries – we picked our huckleberries straight off the plants.  During the summer months, keep an eye out for huckleberries at your local store or farmer’s market. Depending on where you live, you may be able to find fresh huckleberries in season.
  • All Purpose Flour
  • Milk – I used unsweetened Almond Milk for my version of this recipe.
  • Coconut Oil: I love keeping a few jars of this organic coconut oil on hand.
  • Apple Cider Vinegar, which gives these waffles a little extra tang which is really fantastic! I love using this organic apple cider vinegar with the mother which has a great flavor.  I think it gives a nice extra sweetness and depth to these waffles, and makes them taste closer to buttermilk.
  • Baking Powder: I like to use a no sodium baking powder in all my recipes, that way I can control the amount of salt that goes into my food.
  • Maple Syrup
  • Cinnamon: which gives these waffles a subtle spice-y flavor!  I love to add in a pinch for extra warmth and depth of flavor.
  • Vanilla Extract: it’s super important to use real pure vanilla extract, and not artificial baking vanilla flavor. This real all natural vanilla is a fantastic ingredient to give these cookies an extra boost.

These wild huckleberry waffles recipe is a fantastic pantry-staple meal!  It uses almost all ingredients you would have in your dry pantry or cupboards – most of which you probably have on hand. Keeping a well-stocked pantry makes it easy to come up with delicious meals using a few staples you can rotate.

How Do I Make This Fresh Huckleberry Waffle Recipe?

  1. Preheat oven to 225 degrees Fahrenheit.
  2. Mix all waffle batter ingredients together in a large batter bowl.
  3. When your Belgian Waffle maker is ready, scoop the approved amount of batter into the maker, and close the lid carefully. Your waffle maker instructions should say exactly how much batter to use.
  4. Once waffle has finished cooking, place it on a sheet pan in the oven to keep it warm. Repeat steps until the batter is gone.
  5. Serve waffles with powdered sugar, berry compote, fresh fruit, and a drizzle of maple syrup.  Rise & SHINE!

What Can You Do With Huckleberries?

Turn them into jam or waffles of course!  Since huckleberries are closely related to blueberries, you can use the same amount of huckleberries in recipes as you would blueberries. You can add them to pancakes, muffins, pies, buckle, or any breakfast or dessert that calls for blueberries.
