Mayo, but make it better for you!  This light avocado vegan mayonnaise recipe is the perfect plant based substitute that is ready in 5 minutes. All you need is an avocado, lemon, water, a blender, and you have a thick creamy mayo spread ready in a flash! 
 
I love adding vegan mayonnaise to my recipes in place of regular mayo.   It’s a star in some of my favorite entertaining recipes: my Dad’s Famous Coleslaw, our favorite Creamy Kidney Bean Salad, and of course Creamy Cucumber Pasta Salad! This is the best mayo alternative for those who don’t like normal mayonnaise, or who are egg or dairy free!

The Best Blender for the Job

I’ve owned a lot of blenders, but my Vitamix is definitely the best one I’ve owned. This high-speed blender will blend even the toughest of ingredients into pulp.  I prefer using my blender to my food processor for sauces like this or homemade hummus, as it’s much easier to clean the Vitamix. This is definitely one kitchen appliance we use on a daily basis!

  • Avocado – I like to use a super large, ripe avocado for this recipe. 
  • Lemon Juice: Use fresh lemons if you have it, or this really great bottled lemon that you can keep in your pantry if you don’t have fresh lemons. This organic lemon is great for dressings, dips, and even cocktails – and it tastes fresh, which is great to have around if you don’t use lemon juice everyday but still want to keep some around.
  • Water

  1. Add the avocado, lemon juice, and water to a blender or food processor, and mix on low speed until the spread becomes creamy and thick. Taste and adjust seasoning, adding more lemon juice if needed.
  2. Spread the avocado mayo on a sandwich, add to sauces to make them creamier, or enjoy as a veggie dip!
  3. Keep extra avocado mayo covered in the fridge and enjoy within 24 hours.

Ingredients
  

  • 1 large avocado pit removed and flesh scooped out
  • 2 lemons juiced, about 2 tablespoons
  • 2 tablespoons water plus more if needed
