I love a good and citrus-y smoothie in the morning, especially one that is loaded with fruit and protein. This whole lemon smoothie has it all: bright fresh citrus, sweet vanilla flavor, plant-based protein, and a delicious flavor. This smoothie is a tasty breakfast option, and makes a fantastic post-workout drink.
If you love lemon meringue pie, this smoothie is like drinking a slice in a glass! Lemon-flavored foods and desserts are my favorite, and I made this smoothie so I can enjoy some fresh lemon flavor first thing in the morning.
Why This Recipe Works
- It’s bright, fresh, and fruity!
- It’s loaded with flavor from the lemon and tastes great.
- This smoothie is plant-based, vegan, and high in protein if using a vegan protein powder.
- It makes great breakfast option for a quick meal on the go.
Ingredients You’ll Need
- Dairy Free Milk – you can use any variety you like: soy, oat, almond, rice, or coconut milk. I used a plain oat milk for this one, as it has a delicious creamy flavor. Learn how to make your own unsweetened oat milk at home with just oats + water!
- Lemons – I used organic lemons because I blended the peel too.
- Plant-Based Vanilla Protein Powder
- Bananas
- Pitted Medjool Dates – dates add natural sweetness to recipes, and have a fantastic flavor! I’ve been adding dates to everything lately – I buy dates by the box and add them to smoothies, desserts, and just enjoy them as a snack.
- Ground flaxseed – optional, but great for texture!
- Ice
Substitutions and Variations
- Instead of a whole lemon, you can use 2 lemons, zested and juiced! The lemon juice will give it a more subtle flavor.
- You can substitute another natural sweetener for the dates: use pure maple syrup, agave nectar, or honey if desired.
- If you don’t want to add vanilla protein powder, substitute it with 1/2 teaspoon vanilla extract. This gives the lemon smoothie a delicious dessert-y feel.
How To Make This Recipe
Be sure to visit the recipe card below for full ingredient amounts and recipe instructions!
Step 1: Add all ingredients to a high speed blender. If you have a high-speed blender (such as a Vitamix or Ninja, etc), you can add the lemon with the peel! If not, zest the lemon and add the juice, and discard the rest.
Step 2: Blend all ingredients on high speed until you get a smooth consistency. Pour into your favorite glass or mason jar and enjoy.
A Note On Blending Lemons
A high-speed blender is important if you are using the whole lemon – the blender will need to really breakdown the peel and rind. If you don’t have a high-speed blender, you can zest 1 lemon, then add the juice to the smoothie.
I recommend using a good-quality high speed blender for this recipe. I have a fantastic Vitamix blender, which I have been using for years, and it gets daily use in our home.
Choose a blender that has a lot of power, and can pulverize even the toughest of ingredients. My blender can chop ice, dates, frozen fruits, make soups, and even blend nuts into homemade nut butter. Using a good high-speed blender will make perfectly creamy smoothies and sauces every time!
Absolutely! If you have a high-speed blender, you can add the whole lemon (peel and all) in for a bright, citrusy flavor. If you don’t have a high-speed blender, then zest and juice the lemon into the smoothie and discard the peel.
If you have any leftover smoothie that you want to enjoy later, store it in an air-tight container for up to 1 day in the refrigerator. I use a mason jar with an airtight lid.
I like to use bananas which have a subtle sweet flavor, and other tropical fruits like pineapple, mango, or papaya.

Notes
A Note On Blending Lemons
I use a high-speed blender for all my smoothies , it can blend anything. I add the entire lemon to this smoothie – peel and all! Make sure you have a high-speed blender (like a Vitamix or Ninja system, etc.), and not a regular lower speed blender as it can leave chunks of the lemon peel in the smoothie.Substitutions and Variations
-
- Instead of a whole lemon, you can use 2 lemons, zested and juiced! The lemon juice will give it a more subtle flavor.
-
- You can substitute another natural sweetener for the dates: use pure maple syrup, agave nectar, or honey if desired.
-
- If you don’t want to add vanilla protein powder, substitute it with 1/2 teaspoon vanilla extract. This gives the lemon smoothie a delicious dessert-y feel.
