This lemon smoothie recipe is loaded with fruit, plant based protein, and makes a great breakfast or post-work out drink! Vegan & dairy free. Add all ingredients to a high speed blender. If you have a high-speed blender, you can add the lemon with the peel! If not, zest the lemon and add the juice, and discard the rest.
Blend all ingredients on high speed until you get a smooth consistency. Pour into your favorite glass or mason jar and enjoy.

A Note On Blending Lemons
I use a high-speed blender for all my smoothies , it can blend anything. I add the entire lemon to this smoothie - peel and all! Make sure you have a high-speed blender (like a Vitamix or Ninja system, etc.), and not a regular lower speed blender as it can leave chunks of the lemon peel in the smoothie.
Substitutions and Variations
Instead of a whole lemon, you can use 2 lemons, zested and juiced! The lemon juice will give it a more subtle flavor.
You can substitute another natural sweetener for the dates: use pure maple syrup, agave nectar, or honey if desired.
If you don't want to add vanilla protein powder, substitute it with 1/2 teaspoon vanilla extract. This gives the lemon smoothie a delicious dessert-y feel.
