Creamy Spring Vegetable Pasta (Vegan, Gluten Free, Dairy Free)

This creamy spring vegetable pasta is a great use for fresh spring asparagus, mushrooms, onions, and peas. Great with a salad or garlic bread!

Spring has sprung on our homestead!  With the last of the falling snow, we are ready for more outdoor work and yard improvements.  To celebrate, this delicious spring vegetable pasta is now in our dinner rotation as we get plenty of fresh spring asparagus!

With bright fresh vegetables and a warm cream sauce, this pasta is the perfect welcome for spring.

Whats In this spring vegetable pasta?

  • Gluten-Free Pasta, you can use any shape (I used radiatori)
  • Olive oil
  • Garlic
  • Onions
  • Mushrooms
  • Asparagus
  • Peas, you can use fresh or frozen
  • Cream and milk of choice (I used an almond milk)
  • Parmesan or nutritional yeast for sprinkling on top

What I love about this pasta is that is an Easy Weeknight Meal!  AKA what I call a recipe that can quickly be made after a long day of work.  And it makes enough so there are leftovers as well… so meal prep or batch cook away!

When we dug into this pasta it was a huge hit, would definitely give this a 10/10!  The flavors were perfect, and we got our daily serving (or 2 or 3) of veggies in!

How Do I made this Creamy Spring Vegetable Pasta?

  1. Bring a large pot of water to a boil.  Add the pasta and cook to package instructions.  Once pasta is cooked, drain and set aside.
  2. In another large pot, heat the olive oil over low heat.  Add the garlic and onions, and sauté for about 5 minutes until the vegetables begin to soften.
  3. Add the mushrooms and asparagus, and sauté for an additional 5 minutes.
  4. Pour the peas, cashew cream, the reserved pasta water, and almond milk, and bring to a slow boil.  Reduce heat and simmer until asparagus are tender, stirring frequently until sauce begins to thicken.  Add salt and pepper to taste.
  5. Fold the cooked pasta into the sauce, and stir until well combined.
  6. Serve hot, with garlic bread and a salad!

Ingredients
  

  • 1 16 ounce box pasta, gluten free
  • Reserve 1 cup of the pasta cooking water for later
  • 1 tablespoon olive oil
  • 6 cloves garlic minced
  • 1 yellow onion diced
  • 1 lb crimini mushrooms chopped
  • 1 cup frozen peas
  • 1 lb asparagus chopped with woody ends of stems removed
  • 1 cup cashew cream or dairy-free cream
  • 1/2 cup plain unsweetened almond milk
  • Sea Salt and Pepper to Taste
