This dairy free Mediterranean pasta recipe is a fantastic take on the classic without all the dairy. I’m all about making recipes plant-based and dairy free when I can. Dairy-free cooking does NOT have to be bland, boring, or flavorless… It’s quite the opposite when done right. You can achieve total richness and creaminess with some simple swaps. By building meals around vegan pantry staples and swapping in a few plant-based ingredients you can make healthier meals for you and your family. How Do I  Make This One Pot Pasta?

Well, it couldn’t be easier!  One pot pastas are awesome because you only have one dish to clean at the end of the meal… a major win!

Step 1
In a large pot, heat the olive oil over low heat.  Add the garlic and onions and sauté on low heat for 5-6 minutes until vegetables begin to soften.

Step 2
Add the rest of the ingredients to the pot and stir well to combine.  Bring to a boil, then reduce to a simmer.  Cook over low heat for about 20 minutes, stirring frequently.
