- Pasta – I like a classic rotini for this recipe.
- Diced Tomatoes: I only use no salt added diced tomatoes, these boxed tomatoes are really great to stock up on! I like boxed tomatoes better because they are BPA free and more eco-friendly than aluminum cans. - Tomato Paste: thickens the sauce with a deep bold tomato flavor. I only use a no salt added tomato paste, so you can control the amount of salt in the dish.
- Bell Pepper: If you don’t have fresh peppers, these sweet roasted red peppers are a great substitute! I love adding them to breakfast bakes, sandwiches or wraps, and soups.
- Marinated Artichoke Hearts – I love stocking up on these giant jars of Mediterranean Artichoke Hearts. They add so much flavor to this dish.
- Kalamata Olives: make sure they are pitted! I love the rich briny flavor of these herby kalamata olives, which have a purple hue and a really nice flavor. These Greek olives are fantastic for adding to salads, to dips, or just as a quick snack. I like to use these olive packs, which are great for when you need a handful of olives like in this dish.

This dairy free vegan pasta recipe is a fantastic take on the classic without all the dairy. I’m all about making recipes plant-based and dairy free when I can. Dairy-free cooking does NOT have to be bland, boring, or flavorless… It’s quite the opposite when done right. You can achieve total richness and creaminess with some simple swaps. By building meals around vegan pantry staples and swapping in a few plant-based ingredients you can make healthier meals for you and your family. How Do I Make This One Pot Pasta?
Well, it couldn’t be easier! One pot pastas are awesome because you only have one dish to clean at the end of the meal… a major win!
- In a large pot, heat the olive oil over low heat. Add the garlic and onions and sauté on low heat for 5-6 minutes until vegetables begin to soften
- .Add the rest of the ingredients to the pot and stir well to combine. Bring to a boil, then reduce to a simmer. Cook over low heat for about 20 minutes, stirring frequently.
- Top with Extra freshly julienned basil or vegan parmesan cheese. Serve hot!

- 2 tablespoons olive oil
- 6 cloves garlic minced
- 1 sweet onion diced
- 8 ounces mushrooms sliced
- 1/2 cup kalamata olives chopped
- 1 cup artichoke hearts
- 1/2 cup roasted red peppers chopped
- 1 6-ounce can No-Salt-Added Tomato Paste
- 1 14 ounce can No-Salt-Added Diced Tomatoes with juice
- 1 16 ounce box rotini pasta
- 8 cups Low Sodium Vegetable Stock
- 1 teaspoon oregano
- 2 tablespoons fresh basil julienned
- Himalayan Sea Salt and Pepper to Taste
- Optional Vegan cheese to top
