- Good Extra Virgin Olive Oil: I like to use this fruity olive oil which has a fantastic flavor and deep color- it’s inexpensive & I like to keep a few liters stocked up in my pantry. Olive oil has fantastic health properties too: it’s anti-inflammatory & can help fight heart disease.
- Celery – I use both the ribs and the leaves of the celery – they both have great flavor, and the soup gets pureed together so it’s one creamy consistency.
- Onion

- Low Sodium Vegetable Stock – I like to use this low sodium vegetable stock for my recipes because it has great flavor… without all the salt. - Herbs de Provence: my favorite spice blend! This French blend has a mix of rosemary, thyme, sage, and savory for a wonderful and complex flavor.

- Tellicherry Peppercorns: It’s amazing the flavor difference you can get with really good tellicherry black pepper. Amazon has a generic brand tellicherry peppercorn which is the same price is buying pre-ground, and will add way more flavor to your recipes.
- Coconut Milk: I use unsweetened full-fat coconut milk, which I’d definitely recommend over lite coconut milk. The flavor makes this dish super rich and creamy without any dairy.
How Do I Make Cream of Celery Soup Vegan?
- In a large pot, hear the olive oil over medium heat. Add the onion and garlic, sauté for 6 to 7 minutes until vegetables begin to soften.
- Add the celery, and sauté for 5 more minutes over medium heat.
- Pout in the vegetable stock, and add the salt and pepper. Stir well to combine. Bring the soup to a boil, then reduce to a low simmer. Cover with a lid and simmer for 20 minutes until celery has softened.
- Add the coconut milk, and using an immersion blender, puree the soup into desired consistency (I like it fully creamy, but you can leave a few pieces of celery in there for texture if you like).
- Serve hot, or save and use in recipes that call for cream of celery soup. Enjoy!

I’ve owned a lot of blenders, but my Vitamix immersion blender is definitely the best one I’ve owned. This high-speed blender will blend even the toughest of ingredients into pulp.
I prefer using my immersion blender for recipes like soup, as it’s much easier to manage than transferring all the ingredients to a stand blender. This is definitely one kitchen appliance we use on a weekly basis!
