What’s In This Oven Baked Pasta with Goat Cheese Sauce?

- Goat Cheese – I love the sharp, tangy flavor of goat cheese. It works so well paired with the sweet tomatoes and garlic.
- Cavatappi Pasta – this is one of my favorite pasta shapes, especially paired with a cheesy sauce like this. Cavatappi is easy to scoop up with your fork, and is ridged to keep cheesy sauce in every crevasse.
- Onion
- Garlic
- Cherry Tomatoes
- Good Extra Virgin Olive Oil: I like to use this fruity olive oil which has a fantastic flavor.
- Thyme – I used fresh thyme as we have it growing on our property, but this dried thyme would be a perfect substitute.
- Lemon Juice – freshly squeezed, if possible.
- Salt & Pepper
How Do I Make This Tomato Goat Cheese Pasta with Lemon?
- Preheat oven to 400 degrees Fahrenheit.
- In a 8 x 8 inch baking dish, add the goat cheese, chopped onions, garlic, cherry tomatoes, olive oil, thyme, salt, and pepper. Toss well to combine ingredients together before baking.
- Bake the goat cheese and vegetables together for 40 minutes until they brown and begin to bubble in the oven.
- Meanwhile, bring a large pot of water to a boil and cook pasta according to package instructions. Reserve 1/2 up of the pasta water cooking liquid, drain the remainder of the liquid, and set aside.
- Once goat cheese and tomatoes have done baking, carefully remove baking dish from the oven. Add the lemon juice, pasta cooking water, and the cooked pasta to the baking dish, and toss all the ingredients together until well-combined. Serve immediately, and enjoy!

- This recipe is naturally vegetarian. To make vegan or dairy free, substitute goat cheese for a vegan version.
- For a gluten free version, ensure you use a certified gluten free pasta, and make sure goat cheese and any spice ingredients are also gluten free.

- 8 ounces pasta I used cavatappi, save 1/2 cup cooking water
