These ricotta and plum toast slices are great for a quick cozy weekend breakfast, brunch, or brinner (breakfast for dinner!). They are the perfect recipe for brunch guests, or just for getting the whole family together to enjoy a slow weekend meal. This ricotta toast with fig recipe is also great for having company over for a holiday brunch as well. Ready in 5-10 minutes, these toasts are simple to get on the table, and they will go fast! Easy Vegetarian Weekday Breakfasts
This honey plum ricotta toast is what I call an Easy Weekday Meal – which is on your table in under 30 minutes – in this case, just 5! These quick and simple recipes are perfect for those mornings when you want a healthy homecooked meal but don’t want to spend a ton of time in the kitchen. What’s In This Ricotta and Plum Toast Recipe?
- Sandwich Bread – use a gluten free bread if you can’t eat wheat. I like to make my own bread, and they have some great artisan bread gluten free mixes out there too!
- Ricotta Cheese – this creamy and irresistible ricotta cheese is a fantastic base layer for this toast! I’ll also include a vegan version in the recipe card below if you don’t eat dairy… but if you DO eat dairy I’d highly recommend this delicious whole milk ricotta.
- Plums– I used plums that I got from my Misfits Market box – they sell all organic produce at a very discounted price, and purchase right from the farmers. We get Misfit Market boxes every month and love the seasonal variety. You can get $10 off your first box by clicking here!
- Arugula (also called Rocket) – I picked a handful from the garden
- Walnuts: because I love adding heart-healthy and brain-healthy ingredients to my foods when I can. I stocked up a few bags of these walnuts which are super cheap and a great value for the quality.
- Raw Honey: We use our own honey, straight out of the beehives for us! As beekeepers, we have plenty of raw honey so I try to use it in all my recipes instead of sugar. I’d recommend trying a local farmers market to find the best raw honey in your area. Or else, this raw organic honey online here is the next best thing.
- Pink Himalayan Sea Salt: I like to use a pink Himalayan Sea Salt in my kitchen, which has more natural minerals than plain processed table salt. It’s fairly inexpensive, so I’d recommend this salt if you’re looking for an easy way to level up your spice pantry.
Make Plum Ricotta Toast Gluten Free for a Healthy Version
This gluten free ricotta toast recipe is a simple meal to make without the wheat. I’m all about making recipes gluten free when I can. Gluten free cooking does NOT have to be bland, boring, or flavorless… It’s quite the opposite when done right. By building meals around gluten free pantry staples and swapping in a few wheat-less ingredients you can make healthier meals for you and your family. Is There a Vegan Alternative to Honey?
Yes, you can substitute out the honey in this recipe for agave nectar or maple syrup. I prefer agave nectar, it’s my go-to kitchen sweetener because it’s absolutely delicious, and buying organic agave is crazy inexpensive online (compared to other organic sweeteners). It also bakes well, so I like to add it to my baked goods.
How Do I Make Sweet Arugula Ricotta Toast with Plums?
- Toast the bread under the broiler for 3 minutes per side, or in a toaster. Spread each toast piece with ricotta in a thick layer
- Add sliced plums, arugula, and crushed walnuts
- Drizzle or honey on each toast, and enjoy!

- 2 slices bread use gluten free
- 1/2 cup ricotta see Notes below for a vegan ricotta
- 1 large plum sliced
- 1/2 cup arugula
- 2 tablespoons walnuts crushed
- 1 teaspoon honey
Instructions
- Toast the bread under the broiler for 3 minutes per side, or in a toaster. Spread each toast piece with ricotta in a thick layer
- Add sliced plums, arugula, and crushed walnuts
- Drizzle or honey on each toast, and enjoy!

- 1 12-ounce block silken tofu
- 2 tablespoons olive oil
- 1 tablespoon apple cider vinegar
- 1 teaspoon agave nectar
- Pinch of Salt
