This creamy vegan celery soup recipe is a delicious and easy soup to enjoy for a light lunch, or to add to any recipe that calls for cream of celery soup. This plant-based recipe is made from celery, vegetables, spices, and a creamy coconut milk soup.

This is a fantastic dairy free celery soup that is ready in 30 minutes. I love topping this soup with delicious vegan croutons, and serving it up with a delicious spinach, avocado, & tomato salad for a complete meal.

This is a great soup to make if you are cooking with a recipe that uses canned cream of celery soup (like a casserole, or hot dish). It’s great to add to other recipes as a base, or just to enjoy by itself, warmed with a side of crusty bread to dip into it!

What’s In Vegan Cream of Celery Soup?

  • Good Extra Virgin Olive Oil
  • Celery – I use both the ribs and the leaves of the celery – they both have great flavor, and the soup gets pureed together so it’s one creamy consistency.
  • Onion 
  • Garlic
  • Low Sodium Vegetable Stock – I always use low sodium or no-salt-added broth or stock to start, and then I can add salt or other spices later if needed. Check out more low sodium recipes here!
  • Herbs de Provence: my favorite spice blend! This French blend has a mix of rosemary, thyme, sage, and savory for a wonderful and complex flavor.
  • Salt
  • Coconut Milk: I use unsweetened full-fat coconut milk, which I’d definitely recommend over lite coconut milk. The flavor makes this dish super rich and creamy without any dairy.
  • Sea salt and black pepper

How Do I Make Cream of Celery Soup Vegan?

  1. In a large pot, hear the olive oil over medium heat. Add the onion and garlic, sauté for 6 to 7 minutes until vegetables begin to soften.
  2. Add the celery, and sauté for 5 more minutes over medium heat.
  3. Pout in the vegetable stock, and add the salt and pepper. Stir well to combine. Bring the soup to a boil, then reduce to a low simmer. Cover with a lid and simmer for 20 minutes until celery has softened.
  4. Add the coconut milk, and using an immersion blender, puree the soup into desired consistency (I like it fully creamy, but you can leave a few pieces of celery in there for texture if you like).
  5. Serve hot, or save and use in recipes that call for cream of celery soup. Enjoy!
 

Immersion Blenders for Creamy Sauces & Soups

I’ve owned a few hand-held blenders, but my immersion blender is definitely the best one I’ve had. This high-speed blender will blend even the toughest of ingredients (like pepper seeds!) into pulp.  

I prefer using my immersion blender for recipes like this sauce, as it’s much easier to manage than transferring all the ingredients to a stand blender. This is definitely one kitchen appliance we use on a weekly basis.

  • 1 sweet onion chopped
  • 6 cloves garlic minced
  • 1 head celery stalks and leaves, roughly chopped

  • 1 13 ounce Coconut milk unsweetened full-fat
