This Pasta with peppers and onions is a favorite recipe that I was inspired to make from a dish I had at a restaurant. I first had a pepper and onion ‘Rasta Pasta’ at an amazing restaurant called The Red Parrot in Newport, Rhode Island. If you’re driving down the main drag of Newport along the wharf, you can’t miss it!

The pasta is a delicious blend of roasted peppers, tomatoes, and onions tossed with a perfectly cooked penne. Once I had it at the restaurant, I had to recreate it at home. It’s a favorite recipe that we make on repeat when we have extra bell peppers in the fridge.

Ingredients In Vegetarian Pepper Pasta

Be sure to visit the recipe card below for full ingredient amounts and recipe instructions!

  • Penne Pasta: You can use this great penne, which I used for this recipe… or any medium sized pasta you like! I chose the penne because it’s roughly the same size as the chopped peppers.
  • Colorful Bell Peppers: red, yellow, and green bell peppers sliced into strips. If you don’t have fresh peppers, these sweet roasted red peppers are a great substitute! I love adding them to breakfast bakes, sandwiches or wraps, and soups… and they are so delish in this pasta.
  • Onion
  • Garlic or garlic powder
  • Diced Tomatoes or Cherry tomatoes
  • Garlic: I use fresh garlic when I have it, and this great jarred organic garlic when I don’t have fresh. It’s actually super convenient to have pre-chopped garlic on hand for quick and easy meal prep.
  • Full-fat coconut milk for a vegan version, or use heavy cream or cream cheese.
  • Jamaican Jerk Seasoning:  or Jerk Marinade. I like McCormick spices Jerk seasoning best, you can add cayenne pepper or red pepper flakes for more spice.
  • Sea salt and black pepper to taste

Optional Toppings

  • Parmesan cheese
  • Green onions
  • Serve with cooked chicken breast for jerk chicken pasta

Sheet Pan Pasta Recipes For the Win!

This vegan Rasta pasta is loaded with red and yellow bell peppers, to represent the Rastafarian culture, in one of our favorite sheet pan recipes. They are easy to make, simple to toss in the oven and bake, and you only have one dish to clean at the end of the night. Huge fan of sheet pan meals, right here! One of the simplest pasta dishes – the veggies and cream sauce cooks all together in one sheet pan, while you cook the pasta al dente in a separate pot.

So in 30 minutes you have a simple, tasty, and delicious meal for the family… with little to clean up later. You can check out my other sheet pan pasta recipes here for some fun one-pan recipe inspo.
