- Extra Virgin Olive Oil: to sauté the garlic and give this pasta a creamy base. I like using fruity olive oil which has a great flavor.
- Butter – use regular unsalted butter or a vegan/dairy-free butter for a plant-based alternative.
- Fresh garlic cloves
- White Wine: you can use any kind of wine for this recipe, I used a pinot grigio because that’s my favorite. The chef gets a glass while cooking, its the rule in this house.
- Flour: I used all purpose, but you can use a gluten free alternative! Corn starch is a great GF substitution, and will thicken the sauce well.
- Parmesan Cheese
- Fresh Parsley: which gives this sauce a bright fresh flavor!
- Salt & Pepper
How To Make This Recipe
- In a large sauce pan, heat the olive oil and butter over low heat. Add the onions and garlic and gently sauté for about 5 minutes until they begin to soften.
- Add the flour and stir into the veggie mixture with a wooden spoon. Then, pour in the white wine and stir.
- Bring to a simmer and gently simmer for 3 or 4 minutes until the sauce begins to thicken. Add the salt, parmesan, and parsley, and stir until cheese begins to melt.
- Serve with pasta of choice, sauce makes enough for about 1 lb of pasta.

Ingredients
- 4 tablespoons extra virgin olive oil
- 2 tablespoons butter use plant-based for vegan version
- 1 sweet onion finely chopped
- 5 cloves garlic minced
- 1 tablespoon all-purpose flour or corn starch if gluten free
- 1 cup white wine
- 1/2 teaspoon Sea Salt
- 1/2 cup parmesan cheese or alternative like nutritional yeast
- 1/2 cup fresh parsley
- 1/2 teaspoon Black Pepper
Instructions
- In a large sauce pan, heat the olive oil and butter over low heat. Add the onions and garlic and gently sauté for about 5 minutes until they begin to soften. Add the flour and stir into the veggie mixture with a wooden spoon.
- Add the white wine, and stir. Bring to a simmer and gently simmer for 3 or 4 minutes until the sauce begins to thicken. Remove from heat and add the salt, parmesan, parsley, and ground tellicherry pepper. Stir until the parmesan has melted into the sauce.

Love that pasta
A great variation on the usual tomato sauce
I just made it my family loved it! I used angel hair nests about 8 nests came out great and very tasty.
I would say with revisions it could be good. The wine taste was way too strong. The only thing I did different was use a regular onion because its what I had. I had to add more flour and water to mellow out the wine taste. So its ok now but next time I would reduce the wine for sure.
Really good. We aren’t vegan, but my son can’t have dairy. I made this with the vegan recipe and it was so good!

can this sauce be made ahead and kept in the fridge ?
Hello! I haven’t tried to make this sauce ahead of time, but I think you should be able to. Once it’s finished cooking, place in a air tight container and refrigerate. When you reheat to toss with the pasta, you may need to add an extra splash of white wine or pasta cooking water if it’s too thick. Let me know how it turns out!
