A Healthy Ramen Noodle Hack for Quick Weeknight Meals
This thai basil pesto ramen soup is what I call an Easy Weeknight Meal – which is on your table in under 30 minutes. These quick and simple recipes are perfect for those nights when you want a healthy homecooked meal but don’t want to spend hours in the kitchen. What’s In These Ramen Noodles with Basil Pesto?
- Light Sweet Miso Paste – I love this light and sweet miso paste, I keep a few packs in my pantry for recipes when I want to add a little umami flavor in a pinch. Miso is a paste made from lightly fermented soy beans, and is a classic in soups and asian dishes. I use this light sweet miso paste, and it adds the perfect amount of flavor to this soup! It also lasts forever in your fridge or pantry, so I always keep a few around!
- Tamari: tamari is a gluten-free version of soy sauce. Tamari has a bright salty flavor, and adds a really nice depth of umami to this dish. If I am cooking for a crowd, I always use this tamari in my recipes just in case anyone at the table has a gluten allergy, so everyone can enjoy this meal.
- Ramen Noodle Soup Packet: I love this vegan and gluten free ramen noodle soup which is made with rice noodles. It has great flavor and is perfect for those who are trying to eat more vegan or gluten free. If you don’t have any dietary restrictions, then you can use any ramen noodles you desire.
- Kale
- Green Onion
- Thai Basil
- Garlic: I use fresh garlic when I have it, and this great jarred organic garlic when I don’t have fresh. It’s actually super convenient to have pre-chopped garlic on hand for quick and easy meal prep.
- Sriracha – for a little heat! We go through this sriracha like crazy, its great on soups, curries, and noodle bowls like these curry noodles.
- Peanut Oil: or other light high-oleic oil for cooking over high heat, this peanut oil is a light oil which works great in this pesto sauce… use vegetable oil for a nut free version instead.
- Sesame Seeds – I love adding a handful of these sesame seeds to finish off this soup recipe! These seeds add a nice crunch and light flavor to the ramen.

How Do I Make This Vegan Pesto Ramen Recipe?
- To make the pesto, add all the pesto ingredients to a blender or food processor. Blend, adding 1 additional tablespoon of water at a time for a thinner sauce as desired.
- In a medium saucepan, bring the water to a boil. Add the miso paste, tamari, and noodles and reduce the soup to a simmer. Cook the noodles for 6 to 7 minutes until they are done.
- Stir in the pesto, kale, and green onion. Top with a handful of sesame seeds for some added texture.
- Taste and adjust seasoning as needed, adding more Sriracha for heat.

Ingredients
For the Thai Basil Pesto Sauce
For the Pesto Ramen Noodles
- 2 cups water
- 1 teaspoon Light Sweet Miso Paste
- 1/2 teaspoon tamari or soy sauce
- 1 3 ounce package ramen Noodles only, discard the flavor packet
- 2 tablespoons thai basil Pesto Sauce see recipe above
- 1 cup kale
- 1 green onions sliced
- sriracha
- Sesame Seeds for garnish
