These peanut butter ramen noodles are what I call an Easy Weeknight Meal – which is on your table in under 30 minutes.  These quick and simple recipes are perfect for those nights when you want a healthy homecooked meal but don’t want to spend hours in the kitchen. How Do I Make This Peanut Ramen Noodles Recipe?

  1. Cook ramen noodles according to package instructions, but only use half of the flavor packet (discard other half).
  2. Once ramen has finished cooking, take 1/3 cup of the broth and pour it on a separate bowl. Add the peanut butter and stir until peanut butter has melted in the hot broth. Add the sriracha, chili sauce, and lime juice.
  3. Remove noodles from the cooking liquid and toss them in the peanut butter sriracha mixture until well coated. Add the spinach and green onion, and toss with crushed peanuts.  Enjoy!

Ingredients
  

  • 1 3- ounce package of ramen noodles with flavor packet use vegan or gluten free if necessary
  • 1.5 tablespoons peanut butter
  • 1 teaspoon sweet chili sauce
  • 1 teaspoon lime juice
  • 1/2 teaspoon sriracha
  • 1 green onion sliced
  • Handful spinach or other leafy greens
  • Crushed peanuts for garnish

Instructions
 

  • Cook ramen noodles according to package instructions, but only use half of the flavor packet (discard other half).
