I absolutely love a good variety of flavors and textures for breakfast – and this sweet potato breakfast bowl is the most satisfying way to rise & shine. I love roasted up a few sweet potatoes at a time, refrigerating, and using them in fun and versatile breakfasts like this.
The best thing about this recipe is how versatile it is – I used chopped greens (kale) sauteed with peppers, and topped my bowl with fresh tomatoes & pickled onions. But you can use any vegetable you have on hand. Other additions that would be great are zucchini, squash, spinach, or snap peas.
Serve your favorite vegetables along side this sweet potato bowl, top with a poached egg, and enjoy!

What’s In This Sweet Potato Breakfast Bowl?

- Sweet Potatoes – I love roasted a few at a time, and enjoying them during the week for breakfasts like this.
- Eggs – You can scramble, fry, or boil your eggs – but I love a good poached egg with runny yolk on my breakfast bowl.
- Kale – or any greens
- Good Extra Virgin Olive Oil: I like to use this fruity olive oil which has a fantastic flavor and deep color.
- Pickled onions – optional, but they only take 5 minutes and have a few ingredients, highly recommended!
- Bell Pepper
How Do I Make This Breakfast Bowl with Sweet Potatoes?
- Bake the sweet potatoes: preheat the oven to 400 degrees. Pierce the sweet potato with a fork a few times, and roast for 40 minutes until tender. If you have already-cooked sweet potatoes, skip this step.
- In a large skillet, heat the olive oil over medium heat. Add the chopped kale, bell peppers, sesame oil, and salt to the pan. Toss well to combine all the ingredients together and sauté for 7 to 8 minutes until the kale and peppers begins to soften.
- Poach the eggs: in a small pot, heat the water until it just begins to boil. Crack the eggs directly into the simmering water, and allow the eggs the boil in the water for 5 minutes.
- Assemble the bowl: In each bowl, add 1 sweet potato, half of the kale and half of the peppers. Top with the poached egg in each bowl, and top with pickled onions and fresh sliced tomatoes.
- Enjoy warm and top with your favorite condiments.
