Honey Baked Granola Recipe

This honey granola is one of my favorite recipes to use honey in! Crunchy and nutty, its the perfect breakfast topper or even a fantastic snack. You can add it on top of these Breakfast Brownies for a sweet treat!
We harvest honey from our beehives in the fall. Which is the perfect season to bake up a fresh batch of this delicious and naturally sweet granola. I eat it over yogurt bowls, with some fresh fruit. And Brett actually adds a big scoop of granola on top of his oatmeal… for double oat power.
Last year we our hives were so productive, we actually were able to harvest honey 3 different times in the season! We had plenty of honey to give away to our family and friends, to sell, and also to keep a little for ourselves. We like the darkest honey best, so we saved a few extra jars for us for a rainy day!

- Old Fashioned Oats: I used old fashioned oats for this recipe. I found old fashioned oats work much better than quick oats, as they hold up really well while being baked.
- Honey: straight from the beehives! As a beekeeper, I have plenty of honey on hand. Pasteurized honey works just as well in this recipe too.
- Almonds: I love adding these almonds to my recipe for a nutty crunchy bite! You can keep them whole or crush them before adding.
- Walnuts: for a wonderful crunchy and texture!
- Coconut Oil
- Flaxseed Meal: I always add a scoop in my oatmeal for a little extra nutritional punch! This flaxseed meal a wonderful nutty flavor too.
- Cinnamon: which gives this granola is classic spice-y flavor! I love to load it on!
- Vanilla Extract: it’s super important to use real pure vanilla extract, and not artificial baking vanilla flavor.
- Dried Cranberries: I added a handful of dried cranberries, but you can add your favorite dried fruit that you keep on hand. Just dice it small first.
How To Bake Honey Granola
- Preheat the oven to 350 degrees Fahrenheit, and line a baking sheet with parchment paper.
- In a large mixing bowl, add all ingredients and stir well with a spatula to combine.
- Spread granola mixture onto baking sheet, pressing down with your spatula. Granola should be spread in an even layer.
- Bake for 25 minutes, stirring the granola half way.
- Remove from oven and allow to cool. Enjoy with yogurt, ice cream, or on top of a smoothie bowl!
Recipe FAQs
I found that old-fashioned rolled oats work best for granola. Quick oats can make the texture mushy, while steel-cut oats are a bit too tough in the granola.
For extra crunchy granola, try baking the granola at a lower temperature (around 300°F or 150°C) for a longer time and let it cool completely before breaking it apart.
Store any leftover granola in an airtight container at room temperature for up to 2 weeks. For longer storage, you can plain in a resealable freezer bag and freeze it for up to 3 months.

- 1/2 cup coconut oil
- 1/4 cup ground flaxseeds
- 1 teaspoon cinnamon
- 1 teaspoon pure vanilla extract
- 1/2 teaspoon Sea Salt
- 1/2 cup dried fruit
- 2 cups nuts I used almonds, walnuts, and peanuts
