I have been having so much fun with my new waffle maker, and these vegan cornbread waffles were one of the first things I wanted to make! These delicious sweet or savory waffles are super versatile and can be enjoyed by everyone at your table.
Serve these corn bread waffles up with some fresh seasonal fruit and maple syrup, OR (as I did) make turn these waffles into a delicious savory vegan benedict with plant based hollandaise sauce. These waffles are so good, and a easy and simple brunch that is ready in about 15 minutes.

Ingredients In Cornbread Waffles

  • All Purpose Flour: I normally use all purpose flour for all my recipes, I love the consistency and texture of the crumb this flour produces.
  • Corn Meal: I like this medium corn meal, I always keep some in my pantry. It’s great for adding texture to pizza crusts (also the secret for keeping them from sticking on a pizza peel!) and breads, and also to make homemade corn bread.
  • Almond Milk – I used unsweetened Almond Milk for my version of this recipe.
  • Baking Powder: I like this low sodium baking powder which is great for keeping the sodium down in baked goods.
  • Apple Cider Vinegar
  • Flaxseed Meal
  • Maple Syrup
  • Vanilla Extract
  • Pink Himalayan Sea Salt
  • Cinnamon: which gives these waffles a subtle spice-y flavor!  I love to add in a pinch for extra warmth and depth of flavor.

How Do I Make Cornbread Waffles?

  1. Preheat oven to 225 degrees Fahrenheit.
  2. Mix all waffle batter ingredients together in a large batter bowl.
  3. When your Belgian Waffle maker is ready, scoop the approved amount of batter into the maker, and close the lid carefully. Your waffle maker instructions should say exactly how much batter to use.
  4. Once your cornbread waffle has finished cooking, place it on a sheet pan in the oven to keep it warm. Repeat steps until the batter is gone.
  5. Serve waffles with powdered sugar, berry compote, fresh fruit, and a drizzle of maple syrup.  Rise & SHINE!
