I’ve been trying to focus on including more protein and more produce in my diet this year, and this recipe helps me reach my goals. This satisfying vegan tofu breakfast is loaded with good-for-you spices like zaatar and healthy silken tofu.
 
This simple breakfast recipe is a great high-protein morning meal. Enjoy it on it’s own, over toast, or toss in some extra veggies for an omelet. I added za’atar in the scramble and also on top for a little extra flavor!  I also love the texture of silken tofu, it’s exactly like soft scrambled eggs… but made plant-based.

This vegan breakfast scramble with silken tofu is a simple way to get extra veggies in your diet. I’m all about making recipes plant-based when I can. Vegan cooking does NOT have to be bland, boring, or flavorless… It’s quite the opposite when done right. By building meals around vegan pantry staples and swapping in a few plant-based ingredients you can make healthier meals for you and your family. How Do I Make This High Protein Zaatar Tofu Scramble?

  • In a frying pan, mash the tofu with a fork and begin to sauté over low heat.
  • Add the za’atar, olive oil, turmeric, chili powder, and garlic powder. Saute on low heat for about 5 minutes, stirring well to combine. Taste, and add salt and pepper if desired.
  • Add scramble onto toast or a bagel, toss with some vegetables, or just eat by itself… it’s great any way!

Ingredients
  

  • 1 12-ounce block silken tofu
  • 1 tablespoon olive oil
  • 1 teaspoon za'atar plus extra for sprinkling
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon chili powder
  • 1/2 lemon juiced
  • Himalayan Sea Salt and Pepper to Taste
  • 1/2 cup vegetables to top I used avocado and kale

Instructions
 

  • In a frying pan, mash the tofu with a fork and begin to sauté over low heat.
  • Add the olive oil, za'atar, turmeric, chili powder, garlic powder, and lemon juice. Saute on low heat for about 5 minutes, stirring well to combine. Taste, and add salt and pepper if desired.
