I first made this recipe for National Grilled Cheese Day, which is an actual ‘holiday’! I’ve always been a fan of grilled cheeses, but decided to make this one extra special. I added some tzatziki sauce (which is a traditional Greek creamy garlic and dill sauce) that was just calling out to be used in this sandwich.

We made our favorite tofu shawarma recipe the other night and I had some tzatziki sauce left over that was perfect in this sandwich. It turned out creamy, flavorful, and SO yummy for a quick and easy lunch.

What Is Tzatziki Sauce

Tzatziki is a traditional Greek dip made with cucumber, Greek Yogurt, dill, garlic, and lemon juice or vinegar. I make an easy vegan tzatziki which we love to eat on our homestead.

I love adding a dollop of tzatziki on pitas, shawarmas, or just as a dip for veggies. Whether you use a yogurt-based tzatziki or a dairy-free tzatziki, it tastes great in a grilled cheese! It adds a layer of creamy garlicky goodness. You can’t go wrong with a tzatziki grilled cheese.

Ingredients You’ll Need

  • Olive Oil: I like to use this fruity olive oil which has a fantastic flavor and deep color- it’s really inexpensive online here, so I keep a few liters stocked up in my pantry.
  • Bread – I like to use thick crusty bread for my grilled cheese.
  • Spinach or any greens of choice
  • American Cheese and Feta – I like using both for a delicious texture and flavor together.
  • Tzatziki Sauce: My vegan tzatziki recipe is great in this grilled cheese.

Additions and Substitutions

You can make your own tzatziki, or use store-bought. I’ve seen many new varieties of tzatiki in the refrigerated deli section of my grocery store near the other dips (like salsa).

Add fun fillings – roasted red peppers, sliced kalamata olives, or thinly sliced tomatoes.

You can use all American cheese, or add another sprinkle of your cheese of choice inside the sandwich.

How Do I Make Creamy Garlic Grilled Cheese?

  1. Brush one side of bread with olive oil. Place it oil-side down on a plate.
  2. Add the a few leaves of baby spinach, 1 slice of American cheese, a thin layer of the tzatziki sauce, and crumbled feta to top. Place the other side of the bread on top of the feta, and brush the top side with olive oil.
  3. Heat a skillet over medium-low heat until the pan is hot. Add the grilled cheese sandwich, cook for 3-4 minutes until the bread is golden brown, and flip
  4. Cook the second side for another 3-4 minutes until toasted, and the cheese begins to melt.
  5. Remove from the pan, slice in half, and enjoy!
