  • Hard boiled eggs – I use my easy peel hard boiled egg recipe… works like a charm every time – no chipped shells or hard-to-peel eggs.
  • Ranch Dressing
  • Sweet Relish – to give this dish a little extra sweetness. I love this classic sweet relish which has a nice crunch and a sweet and tangy flavor.
  • Yellow mustard
  • Sea salt and black pepper
  • Onion Powder: adds a delicious and savory flavor to this dish as well, and the onion powder is great to add a little onion flavor to this dish… without actual onion.
  • White vinegar – for a delicious extra tang.

This egg salad without mayo recipe is ready from start to finish in just about 15 minutes… a great quick weekday lunch, or a simple dinner to make on the go for busy weekends.  The ranch dressing makes a great mayo substitute – it’s creamy, tangy, flavorful, and deliciously herby.

How To Make This Recipe

Step 1: If you are making the hardboiled eggs – bring a pot of water to a boil and add the eggs in. Cook for 11 minutes, and run the eggs under cook water. When cool enough to handle, peel eggs and mash with with a fork.

Step 2: To the eggs, add the vinegar, sweet relish, ranch dressing, onion powder, mustard, salt, and pepper. Mix well to combine.

Step 3: Add the chopped salary, and fold it into the egg salad. Taste, and adjust seasoning as needed – adding more salt or pepper if desired.
