I’ve tried many savory spaghetti squash recipes, but this sweet maple roasted version may be the best one yet! It’s baked (or air fried) with a coating of pure maple syrup, butter, and brown sugar, roasted in the oven so you get delicious flavor baked into each bite.

A Cozy Fall Side Dish Everyone Will Love
This oven roasted spaghetti squash recipe is one of my favorite sides – it’s a crowd-pleaser dish that is always a major hit on our table. These delicious recipes are the perfect accompaniment to serve with protein or bread dumplings.

Ingredients You’ll Need

- Spaghetti squash
- Good Extra Virgin Olive Oil
- Pure Maple syrup: for natural sweetness, I’d definitely recommend using pure maple syrup in this recipe.
- Brown Sugar: In addition to the maple syrup, I like to use a dark brown sugar which has a nice deep molasses flavor.
- Salt & Black Pepper
- Butter – I always use unsalted butter to reduce the amount of sodium in my cooking.
Additions and Substitutions
You can use olive oil instead of butter for a plant-based version.
Top the squash with some vegetarian parmesan cheese at the end for a delicious sweet and savory side dish!
Want a bit of heat? Add a sprinkle of cayenne pepper inside the squash before baking.
Step-By-Step Photos and Directions

Step 1: Preheat your oven to 400 degrees Fahrenheit. Prep your spaghetti squash: cut each squash in half lengthwise. With a spoon, scoop out the seeds and any dark membranes.Â

Step 2: In each squash half, add 1 teaspoon olive oil, 1 teaspoon maple syrup, 1 teaspoon of brown sugar, and a small pinch each of salt and black pepper. Using a brush, brush the insides of the squash with the maple mixture. So the insides are coated.

Step 3: Take a baking sheet pan, and place parchment paper on top. Place each squash half on the baking sheet, cut side-up. Bake for 40-50 minutes until the inside of the squash is fork-tender.

Step 4: Add a small pad of butter to each squash while it is still warm (optional but highly recommended). Serve warm from the oven.

Yes! Follow steps 2 & 3, then bake the spaghetti squash at 400 degrees Fahrenheit for 20 minutes. You may only be able to fit 2 halves at a time, so you may need to cook the squash in two batches.
If you have leftover squash, wrap it in plastic wrap and refrigerate. Reheat in the microwave or air fryer until hot.
