I love repurposing my Thanksgiving leftovers, and this cranberry mayonnaise recipe is the BEST way to use that leftover cranberry sauce you have from the holidays. It’s tangy, light, and delicious. This makes a fantastic spread for a big turkey sandwich or wrap. Great with other proteins as well: chicken, pork, or crispy tofu.  Load it on your next sandwich and enjoy!

Instead of tossing the cranberry sauce in the compost or garbage, you can repurpose it into a delicious and flavorful spread. I’m all about saving anything I can from my kitchen, and this sauce is a great way to avoid letting leftovers go to waste!

What’s In This Herby Cranberry Mayo Spread?

  • Cranberry Sauce: It can be homemade or canned, either works amazing! These amazing little 8 ounce cans of cranberry sauce are prefect for this recipe too, in case you don’t have leftover cranberry sauce but still want to make this recipe.
  • Mayo: You can use a plant-based mayo if vegan, or a regular or lite mayonnaise for this recipe. I usually stay away from ‘lite’ mayo but it doesn’t matter too much in this spread, it is creamy and flavorful with any mayo you use!
  • Garlic
  • Herbes de Provence: probably my favorite spice blend! A delicious and herby mix of thyme, rosemary, sage, savory, and lavender. SO delicious on roasted vegetables, potatoes, and in soups.
  • Salt: I like to use this pink Himalayan sea salt because of the texture.

Make Ahead Cranberry Mayo Recipe

This cranberry mayonnaise recipe is a fantastic and simple recipe to make ahead. Great for a busy weeknight, for entertaining, or just for those nights when you don’t feel like cooking. 

I like to prep one this ahead of time, and refrigerate for sandwiches later in the week.  Having ready cooked meals in the fridge or freezer is a great way to enjoy home cooked meals when you don’t have time in the kitchen.

  1. In a small bowl, mix together all ingredients until they are a smooth consistency.
  2. Spread on sandwiches, wraps, or use as a base for turkey salad. Mangia!

Dietary Modifications

  • To make this recipe vegan, and egg free make sure  you use a vegan mayonnaise.  Mayonnaise is traditionally made with eggs, so make sure to get an egg free version or make your own!
  • To make this gluten free, just ensure the mayonnaise and cranberry sauce are verified gluten free.
