This feta grilled cheese recipe is a quick meal, and super versatile. You can add your favorite ingredients into the sandwich like sliced tomato, roasted red pepper, or a spread of pesto.

We have been loving feta cheese lately! Its such a great addition to salads, wraps, or pasta – and now grilled cheese!  Since I work from home, I love coming up with quick and easy lunches that I can make on my lunch breaks – and this warm sandwich is a favorite. It’s ready in 10 minutes, has only a few simple ingredients, and totally delicious and satisfying.

Feta cheese doesn’t exactly melt like mozzarella cheese or cheddar, so you won’t get any glorious cheese pulls with this sandwich. It does however bring a ton of extra flavor to your sandwich, and makes any grilled cheese feel like a grown up treat.

What’s In This Vegetarian Feta Grilled Cheese Sandwich Recipe?

  • Slices of Bread: any kind you would normally use for a sandwich. You can use white, wheat, rye, gluten free, whole grain, sourdough bread, or pumpernickel – any crusty bread of your choice.
  • Feta cheese: I used a crumbled feta, but if you buy a block of feta soaked in water, make sure to pat it dry and slice thin before adding it to the sandwich.
  • Large Tomatoes: I added fresh tomatoes, cut into thick tomato slices
  • Butter or cooking spray for spraying the pan: you can also use extra virgin olive oil for a vegan version.

More Delicious Ingredients for Add-Ins

You could add in sliced red onion. but you can add any of your favorite vegetables: peppers, kalamata olives, or spinach would also be delicious.

Fresh spinach or even cooked spinach (drained and patted dry with a paper towel) would  be a great addition to these cheese sandwiches.

Or add other types of melty cheese: parmesan cheese or cheddar

Add fresh oregano leaves or parsley, fresh basil, or any fresh herbs you love.

Or add in sun-dried tomatoes or roasted red peppers.

What To Serve with This Grilled Cheese

I love serving this with a simple salad: a fresh mixed greens and spinach mixture, with a little lemon juice and olive oil, and a pinch of salt and black pepper. 

You could also serve this great grilled cheese with fresh fruit, a fresh pickle, or chips if desired.

How Do I Make Feta Grilled Cheese?

  1. Heat a large skillet or non-stick pan over medium heat.
  2. Assemble the sandwich: layer thick sliced tomatoes (or any other toppings) and add the feta cheese sandwich.  Butter the one side of each slice of bread, and place the butter side of the bread down in the hot skillet.
  3. Toast on low heat for 3 or 4 minutes until bottoms of the grilled cheese begins to brown.  Flip, and continue to cook for another 2 or 3 minutes.  To get the inside of the sandwich hot, you can place a lid over the pan after flipping the sandwich. Once the bread has browned, remove pan from heat, carefully slice sandwich, and enjoy!

  • This recipe is naturally vegetarian – just make sure you use vegetarian ‘toppings’ in the sandwich.
  • For a gluten free grilled cheese, use certified gluten free bread.
  • To make vegan or dairy free, just substitute out the feta cheese for a vegan version, and the butter for olive oil to toast the bread.

  • 1 tablespoon butter
