This vegan mushroom toast is a simple way to get extra veggies in your diet. I’m all about making recipes plant-based when I can. Vegan cooking does NOT have to be bland, boring, or flavorless… It’s quite the opposite when done right. By building meals around vegan pantry staples and swapping in a few plant-based ingredients you can make better meals for you and your family.

- Mushrooms & Parsley
- Olive Oil: I like to use this fruity olive oil which has a fantastic flavor and deep color- it’s really inexpensive online here, so I keep a few liters stocked up in my pantry. For the quality of oil you get, it’s an excellent value, I would highly recommend!
- Garlic: I use fresh garlic when I have it, and this great jarred organic garlic when I don’t have fresh. It’s actually super convenient to have pre-chopped garlic on hand for quick and easy meal prep.
- Herbs de Provence: my favorite spice blend! This French blend has a mix of rosemary, thyme, sage, and savory for a wonderful and complex flavor.
- Red Chili Pepper Flakes: for a little heat! I like to add a few shakes to this recipe to give this dish a nice complex depth of flavor.
- Sandwich Bread – use a gluten free bread if you can’t eat wheat. I like to make my own bread, and they have some great artisan bread gluten free mixes out there too!

This vegan garlic mushroom toast recipe is great for a quick cozy weekend breakfast, brunch, or brinner (breakfast for dinner!). They are the perfect recipe for brunch guests, or just for getting the whole family together to enjoy a slow weekend meal. These toasts are also great for having company over for a holiday brunch as well.
Ready in under 30 minutes, they are simple to get on the table, and they will go fast! How Do I Make This Vegan Mushroom Toast Recipe?
- In a large pan, heat the olive oil over medium heat. Add the garlic and fry for 3-4 minutes until it begins to brown at the edges. Add the mushrooms, herbs de Provence, and sea salt, and sauté for 5 minutes more until the mushrooms begin to shrink.
- Lower heat, cover, and sauté mushroom’s for 4-5 minutes more.
- Toast the bread in a toaster or under the broiler for 3 minutes. Top each slice of toast with 1/4 of the mushroom mixture, and add fresh parsley and red pepper flakes to garnish. Enjoy!

Ingredients

- 4 cloves garlic minced
- 8 ounces mushrooms sliced
- 1 teaspoon Herbs de Provence
- 1/4 teaspoon sea salt
- 4 slices gluten free bread
- 1/2 cup fresh parsley chopped
- 1/4 teaspoon crushed red pepper flakes
