The base of this recipe is pitted dates. Be sure to get pitted ones, as it will save you a lot of time from pitting them yourself. Also, try to get the largest dates you can find. The larger the dates, the more filling you can stuff inside them.
The filling is made by whipping cottage cheese, a drizzle of honey, and some sea salt. Whip this together in a food processor until you have a thick, silky filling.
And the dates are topped with crushed walnuts, and another drizzle of honey for a bit of added sweetness. The honey also helps the walnuts stick to the dates.

You can top the dates with an extra sprinkle of sea salt, if desired.
