Cottage Cheese Stuffed Dates with Honey and Walnuts
These cottage cheese stuffed dates are the perfect balance of salty and sweet, with chewy dates stuffed with a creamy filling and topped with crushed nuts and honey. This recipe makes the perfect snack, and a great way to elevate cottage cheese into a delicious filling.
Slice the pitted dates halfway though, with the bottoms still intact so they can be filled.
In a food processor, add the cottage cheese, honey, and salt. Whip on high speed until well combined.
Using a small spoon, fill each date with the cottage cheese mixture. Repeat until all dates are filled.
Drizzle the dates with a bit more honey.
Top with crushed walnuts and serve at room temperature.

Additions and SubstitutionsYou can top the dates with an extra sprinkle of sea salt, if desired.Make this with different nuts: crushed pistachios, slivered almonds, or chopped hazelnuts would all be great substitutions.
