Vegan Sourdough Croutons with Garlic & Herbs

These vegan sourdough croutons are so simple and loaded with flavor! Great on salads, soups, or just eaten by the handful (no judgement)!
2020 is the year of sourdough for us, and I have been loving every carby loaf! When I have extra sourdough bread that is getting stale, these garlic & herb croutons are the perfect way to breathe new life into old bread.  Just toss with bold flavorful spices, bake, and enjoy fresh croutons straight outta the oven.

What’s In These Vegan Sourdough Bread Croutons?

  • Sourdough Bread, like really really good sourdough bread – bonus points if its homemade. My foolproof Guide to Sourdough Starter is simple, unpretentious, and will have you baking your first loaf in one week!  You can absolutely use bread from a bakery or a gluten free load from the store… but if you haven’t tried baking your own sourdough loaf, I promise it is worth it!
  • Olive oil, just like the bread use really really good olive oil. Dipping grade, with a deep fruity flavor and a rich aftertaste.  No basic salad oil here, use the good stuff!  Since this recipe has so few ingredients, the ones you put in really count.
  • Italian seasoning: I use a blend that has parsley, rosemary, thyme, oregano, and marjoram.  If you have any of those herbs fresh, use ’em!  Parsley is one of my favorite foods, I use it in as many recipes as I can, and fresh parsley would be absolutely killer in these croutons.  I didn’t have any at the time, but a note to myself for future recipes!
  • Garlic Powder: Because the smell of garlic in the oven is absolutely tantalizing. The bright rich garlic flavor transforms old bread into baked indulgent crisps.  Load it on!
  • Onion Powder: for a similarly deep savory flavor.

 

How Do I Make These Garlic & Herb Sourdough Croutons?

  1. Set the oven broiler to low. Place a baking rack is the center if the oven.
  2. Cube the bread into small 1/2 inch cubes, add to a large mixing bowl.
  3. To the bowl, add the olive oil, Italian seasoning, garlic powder and onion powder. Mix well until bread is coated in oil and spices, and place the bread in an even layer on a baking sheet. Place the baking sheet on the middle rack in the oven.
  4. Bake over low broiler for about 5 minutes, then flip and broil for another 5 minutes on the other side.
  5. Depending on the heat of your broiler it may take less (or more) time so pay close attention when the croutons are in the oven so they do not burn.
  6. Once the croutons turn a golden brown, remove from oven and allow to cool. Top on soups or salads… Or just eat a handful as a snack.  Yep, they are that good!

Dietary Modifications

  • My Sourdough bread recipe that I used to make the croutons is vegan, vegetarian, & dairy free and has only 3 ingredients: flour, salt, and water.
  • You can easily make these gluten free by using a gluten free sourodugh starter, or use a GF load of bread from a bakery or store.
  • These croutons are naturally refined sugar free too!
