These soft pull-apart dessert bars are traditional rice krispie treats recipe with added white chocolate chips in the bars and sprinkled on top. They are the perfect sweet anytime – and they are simple to make – a great rainy day baking recipe for kids! This is a great recipe for leftover white chocolate chips – I always seem to have half a bag in the pantry, and these were so delicious! A great party dessert that is made with just a few pantry staple ingredients.

- Rice Cereal: I like this organic brand of crispy rice cereal for my treats to keep it real – it makes me feel going knowing there is some good stuff in these bars – and the texture is amazing!
- Butter, can be plant based – if you don’t have fresh butter on hand, this butter powder is actually amazing! I’ve baked cookies with it, and I really like having some butter in the pantry in a pinch.
- Vegan Mini Marshmallows – I like to use a plant-based marshmallow to keep these treats plant-based. These marshmallows are vegan and gluten free.
- Vanilla Extract: it’s super important to use real pure vanilla extract, and not artificial baking vanilla flavor. This real all natural vanilla is a fantastic ingredient to give these rice bars an #extra boost.
- White Chocolate Chips: which are used twice in this recipe – these delicious chips melt into the bars, and are sprinkled on top for maximum flavor!

These white chocolate rice krispie treats are a fantastic and simple recipe to make ahead. I like to prep a baking dish of these ahead of time on the weekends for an easy treat during the week. How Do I Make Rice Krispie Treats with White Chocolate?

Line a large 9×9 glass baking dish with parchment paper, set aside. Also set aside about 1/2 cup of mini marshmallows, these will be used later in the recipe.

In a large pot, add the butter and remainder of the marshmallows on low heat. Stir for about 5-10 minutes until the ingredients have completely melted together.

Add the vanilla extract to the marshmallow mixture and stir well to combine.

Add the rice cereal, half of the white chocolate chips, and the extra 1/2 cup of marshmallows to the pot and mix well.

Pour the rice cereal mixture into the baking dish – and gently press the rice cereal down. Make sure to not pack down too hard, as the looser they are placed in the baking dish the softer the treats will be.

Sprinkle the top with the last half of the white chocolate chips. Wait for 30 minutes to cool, then cut, serve and enjoy!
