I am so excited to partner with One Degree Organics to bring you this tasty chocolate rice crispy treats recipe. They sent me a sample of their Organic Sprouted Brown Rice Cacao Crisps which I used as the base to make these decadent chocolate snack bars.
These brown rice crisps are made with sprouted whole grains and legumes . They’re also lightly sweetened with organic sweeteners – no high fructose corn syrup – and free from artificial colors, flavors and preservatives.
What’s In Rice Crispy Treats with Cacao Powder?
- Brown Rice Cacao Crisps – this cereal is light, fluffy, crunchy, and totally perfect for these cacao bars! Naturally sweetened and made with whole organic ingredients.
- Coconut Oil – I love the flavor of coconut oil in these cereal treat bars instead of traditional butter. The coconut flavor pairs really nicely with the chocolate!
- Organic Cacao Powder – which is great to use instead of sweet milk chocolate, and gives these treats a great rich chocolate flavor. Cacao is also an antioxidant powerhouse, making it a better choice over refined chocolate.
- Mini Marshmallows – I like to use a plant-based marshmallow to keep these treats plant-based. These marshmallows are vegan and gluten free.
- Pure Vanilla Extract
- Dark Chocolate Chips – I also like these chips which are plant based and dairy free.
How Do I Make Cacao Rice Crispy Treats?

Line a large 9×9 glass baking dish with parchment paper, set aside. Also set aside about 1/2 cup of mini marshmallows, these will be used later in the recipe.

In a large pot, add the coconut oil, cacao powder, and the remainder of the marshmallows on low heat. Stir for about 5-10 minutes until the ingredients have completely melted together.

Add the vanilla extract to the marshmallow mixture and stir well to combine.

Add the Sprouted Brown Rice Cacao Crisps, half of the chocolate chips, and the extra 1/2 cup of marshmallows to the pot and mix well.

Pour the rice cereal mixture into the baking dish – and gently press the rice cereal down. Make sure to not pack down too hard, as the looser they are placed in the baking dish the softer the treats will be.
- Sprinkle the top with the last half of the chocolate chips. Wait for 30 minutes to cool, then cut, serve and enjoy!

Equipment
- Mixing Bowl
- 9 x 9 inch baking dish
- Parchment Paper
- Large Pot
Ingredients
- 1/3 cup coconut oil
- 2 tablespoons cacao powder
- 4 cups rice cereal
- 10 ounces mini marshmallows
- 1 teaspoon vanilla extract
- 1/2 cup chocolate chips
