The Perfect Vegetarian Summer Salad Recipe
This spinach chickpea salad couldn’t be easier to make! Just add cooked canned chickpeas, spinach, veggies of your choice, some fresh herbs, and whip up a 5 minute Dijon dressing. And lunch or dinner is served! This is a great salad to bring to a summer block party, it’s a total crowd pleaser.
One of my favorite vegetarian side salads, and something everyone at the table will love. And you can make the dressing ahead of time. Prepare the dressing the day before the party, cover and refrigerate. Â

- Baby Spinach
- Low or No Salt Chickpeas: one of my favorite pantry staple ingredients! You can use canned chickpeas (I’d highly recommend a low sodium or no salt version), or you can make no soak dried chickpeas in the Instant Pot or pressure cooker.
- Tomatoes
- Feta Cheese – I used a crumbled feta for this recipe.
- Extra virgin olive oil
- Whole Grain Dijon Mustard – for a really nice flavor and texture, whole grain dijon is a favorite in our pantry… I’d stay clear from yellow prepared mustard for this recipe.
- Honey – for a little sweetness in the dressing
- Garlic
How Do I Make This Spinach Salad with Chickpeas?
- In a large bowl, combine washed fresh baby spinach, tomatoes, canned chickpeas, walnuts, and feta cheese.
- In a mason jar, add all the dressing ingredients: olive oil, fresh lemon juice, mustard, honey, and garlic. Seal with an air right lid and shake well to combine.
- Pour dressing over the salad, and toss well. Taste and adjust seasoning as needed, adding salt and pepper if desired.

Spinach Chickpea Salad
Ingredients
For the Salad
- 4 cups baby spinach fresh
- 1 cup cherry tomatoes halved
- 1 14-ounce can chickpeas drained and rinsed
- 1/2 cup walnuts
- 1/4 cup feta cheese
For the Dressing
- 1/3 cup extra virgin olive oil
- 1 lemon juiced (about 1/3 cup lemon juice)
- 2 cloves garlic pressed or finely minced
- 1 tablespoon whole grain mustard or Dijon
- 1 teaspoon honey
- 1/4 teaspoon Sea Salt
