This savory ricotta and pea toast recipe is the perfect breakfast when you want something totally decadent but also want it in 5 minutes. This beautiful toast takes advantage of leftover vegetables, and is loaded on creamy and sweet ricotta. Drizzle some honey on top, add a sprinkle of sea salt, and breakfast is served.
We grew fresh snap peas in our garden this year, and have had a steady supply of them all summer and fall. I love cooking peas into soups, stir fries, and sheet pan dinners – BUT there is nothing like the crunch of fresh snap peas. Top peas on a toast slathered with ricotta cheese and you have one healthy breakfast.

This gluten free snap pea and ricotta toast recipe is a simple meal to make without the wheat. I’m all about making recipes gluten free when I can. Gluten free cooking does NOT have to be bland, boring, or flavorless… It’s quite the opposite when done right. How Do I Make Ricotta Toast with Snap Peas?

  1. Toast the bread under the broiler for 3 minutes per side, or in a toaster. Spread each toast piece with ricotta in a thick layer.
  2. Chop fresh snap peas, and add them to the toast. Julienne the basil, and add as well.
  3. Add a sprinkle of crushed chili flakes, sea salt, and tellicherry pepper, and enjoy!

Vegan Ricotta Recipe

  • 1 12-ounce block silken tofu
  • 1 clove garlic
  • 2 tablespoons nutritional yeast
  • 2 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Italian seasonings
  • Pinch of Salt 
Add all ingredients to a blender or food processor, and combine until smooth.
