This sugar snap pea ricotta toast recipe is the ultimate creamy savory breakfast! Ready in 5 minutes and satisfying enough to keep you satisfied. 
 
This loaded ricotta toast is the ultimate luxurious breakfast plate, piled high with grilled vegetables (I used green onions and fresh snap peas), spices, and creamy ricotta.

This savory ricotta and pea toast recipe is the perfect breakfast when you want something totally decadent but also want it in 5 minutes. This beautiful toast takes advantage of leftover vegetables, and is loaded on creamy and sweet ricotta. Drizzle some honey on top, add a sprinkle of sea salt, and breakfast is served.
 
We grew fresh snap peas in our garden this year, and have had a steady supply of them all summer and fall. I love cooking peas into soups, stir fries, and sheet pan dinners – BUT there is nothing like the crunch of fresh snap peas. Top peas on a toast slathered with ricotta cheese and you have one tasty breakfast.

These snap pea and ricotta toast slices are great for a quick cozy weekend breakfast, brunch, or brinner (breakfast for dinner!).  They are the perfect recipe for brunch guests, or just for getting the whole family together to enjoy a slow weekend meal. This ricotta toast with peas recipe is also great for having company over for a holiday brunch as well.

This pea ricotta toast is what I call an Easy Weekday Meal – which is on your table in under 30 minutes – in this case, just 5!  These quick and simple recipes are perfect for those mornings when you want a homecooked meal but don’t want to spend a ton of time in the kitchen.

What’s In This Snap Pea Ricotta Toast Recipe?

  • Sandwich Bread – use a gluten free bread if you can’t eat wheat. I like to make my own bread, and they have some great artisan bread gluten free mixes out there too!
  • Extra virgin olive oil
  • Ricotta Cheese – creamy and irresistible ricotta cheese is a fantastic base layer for this toast!  I’ll also include a vegan version in the recipe card below if you don’t eat dairy… but if you DO eat dairy I’d highly recommend this delicious whole milk ricotta.
  • Snap Peas and Garlic 
  • Red Chili Pepper Flakes: for a little heat! I like to add a few shakes to this recipe to give this dish a nice complex depth of flavor.
  • Pink Himalayan Sea Salt

How Do I Make Ricotta Toast with Snap Peas?

  1. Toast the bread under the broiler for 3 minutes per side, or in a toaster. Spread each toast piece with ricotta in a thick layer.
  2. Chop fresh snap peas, and add them to the toast. Julienne the basil, and add as well.
  3. Add a sprinkle of crushed chili flakes, sea salt, and tellicherry pepper, and enjoy!

Ingredients
  

  • 2 slices bread use gluten free
  • 1/2 cup ricotta see Notes below for a vegan ricotta
  • 1 cups snap peas stems removed
  • 1/4 cup basil julienned
  • 1/4 teaspoon Crushed Red Pepper Flakes
  • Sea Salt and Black Pepper

Instructions

Notes

Vegan Ricotta Recipe

  • 1 12-ounce block silken tofu
  • 1 clove garlic
  • 2 tablespoons nutritional yeast
  • 2 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Italian seasonings
  • Pinch of Salt 
Add all ingredients to a blender or food processor, and combine until smooth.
