Viral TikTok feta cheese pasta… but make it vegan! OK, as soon as I saw the baked feta cheese pasta hack on TikTok, I had to make it vegan. I love fun new ways of cooking, and this amazing plant-based baked pasta recipe skips the cheese (and the sodium!) for a vegan-friendly recipe everyone can enjoy.

Ingredients You’ll Need

  • Vegan “Feta” Cheese: I actually used marinated silken tofu for this recipe which turned out great. I soaked a block of tofu overnight in lemon juice, miso paste, apple cider vinegar, and oregano. I stock up on this pantry-staple tofu which I used in this dish. And I keep a few of these miso paste containers on hand at all times… bring the flavor!
  • Cherry Tomatoes: I used ones that we froze from our garden in the summer, but any cherry tomatoes would be great. If you don’t have fresh tomatoes, I recommend diced tomatoes.
  • Garlic
  • Salt & Pepper
  • Extra virgin olive oil
  • Fresh Basil
  • Pasta – you can use regular pasta or a gluten free variety if you prefer.
  • Coconut Milk: an optional ingredient if you want a little extra creaminess! I only use full-fat coconut milk in my recipes (because YUM).

Additions and Substitutions

You could use diced or canned tomatoes instead of fresh, if that is what you have on hand.

Add in chili flakes for extra heat, or a few drops of your favorite hot sauce.

Use dried basil instead of fresh, or try adding different spice blends like Italian spices or Cajun spice for different flavor profiles.

Even faster than ordering takeout!

How Do I Make Viral TikTok Feta Pasta Vegan?

  1. Preheat the oven to 400 degrees Fahrenheit. In an 8×8 inch baking dish, add the marinated tofu feta, tomatoes, garlic, oregano, olive oil, salt, and pepper. Place baking dish in the oven, and bake uncovered for 30 minutes or so until tomatoes have blistered and garlic cloves have begun to caramelize.
  2. With a fork, mash the tomatoes and tofu together until a thick sauce begins to form. Sprinkle the fresh basil on top of the pasta.
  3. *OPTIONAL – for extra creaminess to mimic the feta cheese, you can add 1/2 cup full fat coconut milk to the sauce to give it a richer consistency.
  4. Toss the pasta sauce in with pasta of your choice. Garnish with additional fresh basil before serving.

Ingredients
  

  • 1 block marinated tofu feta *see Notes below for recipe
  • 3 cups cherry tomatoes
  • 5 cloves garlic
  • 1/2 teaspoon oregano
  • 2 tablespoons extra virgin olive oil
  • 1/2 teaspoon Sea Salt
  • 1/2 teaspoon Black Pepper
  • 1/2 cup chopped fresh basil
  • 8 cooked pasta of choice use gluten free
  • Coconut milk optional

Instructions

Notes

Marinated Tofu Feta Recipe
1 block of tofu
1/4 cup fresh squeezed lemon juice
2 1/2 tablespoons of white miso paste
2 tablespoons of apple cider vinegar
1 teaspoon dried oregano
In an airtight container, add the whole black of tofu and top with lemon juice, miso paste, vinegar and oregano.  Add enough water to cover the tofu, and seal with airtight lid.  Allow tofu to marinate overnight or for 6-8 hours before using.
