A No-Cook Tofu Recipe That’s Perfect for Summer
This no-cook marinated tofu feta cheese is a quick and simple recipe. I love a good no-cook recipe for those days when I’m not feeling like standing around the stove, or for summer nights when it’s too hot to cook. This vegan feta substitute comes together in about 5 minutes, and doesn’t require the stove or microwave to make. Just use a few pantry staple ingredients and you have a healthy meal ready the next day. And very little to clean up afterwards… an added bonus!
What’s In This Dairy Free Feta Cheese Alternative?
- Tofu – I like using extra firm tofu, or firm tofu that has been in a tofu press to remove excess liquid. Or you can use an extra firm silken tofu too. The texture of the tofu and tangy flavor from the marinade ingredients make this taste like traditional feta cheese.
- Extra virgin Olive Oil
- White Miso Paste
- Fresh lemon juice
- Nutritional Yeast – gives this vegan tofu feta cheese a
- Apple Cider vinegar, or lemon juice for a nice tang.
- Oregano: a spice I always put in my marinades! This dried oregano has a bright and earthy flavor, and goes so well with the tofu.
- Sea salt & Black pepper
- Toppings: fresh herbs, red pepper flakes, or lemon zest.

How To Make Feta Cheese without Dairy
- Press your tofu – get as much moisture out of the block of tofu as possible, this press does the trick perfectly! Or wrap the tofu in paper towels and place it on a plate. Put another plate on top and a weight (like a small cookbook) on top. This will draw the water out slowly.
- Cube the pressed tofu into bite sized pieces. In a shallow baking dish or bowl, mix in the rest of the ingredients until the cubes of tofu are covered in the marinade.*
- Allow the tofu to marinate overnight in an airtight container for 8 hours minimum, up to 2 days maximum.
- Serve in any dish you would use tofu in: Tofu Feta Caprese Salad, a vegan cheese board, on toast, or crumble on a salad.

Tofu Feta Cheese
Ingredients
- 1 16 ounce block tofu
- 1/4 cup water
- 1/4 cup fresh squeezed lemon juice
- 1/4 cup extra virgin olive oil
- 2 1/2 tablespoons Light Miso Paste
- 2 tablespoons apple cider vinegar
- 1 teaspoon dried oregano
- 1/4 teaspoon sea salt and black pepper
- 1/4 cup nutritional yeast
Instructions
