This recipe is yet another amazing Greek recipe from our family friend George, who shares his top family recipes with us! He gave us our favorite orzo avgolemono soup and Greek baked giant beans – and yet another to add to our favorites.
This delicious, flaky, and flavorful pie takes a bit of time to make, but is worth every bite! Start by making the filling, laying out the phyllo dough in a baking sheet, and covering the top with more phyllo. Bake, and enjoy!

This easy spanakopita recipe is the tastiest, coziest dinner meal. It’s perfect for a hearty main dish for the family, and also great to make for company if you are having guests for dinner. The oven does most of the work, so you can enjoy hands-off time while you prep sides or a salad.

Ingredients for This Greek Spinach and Leek Pie Recipe
- Good Extra Virgin Olive Oil
- Leeks
- Green Onions or Spring Onions
- Fresh Parsley
- Baby Spinach – you can use either fresh or frozen. I used fresh, but if you do use frozen spinach, make sure you thoroughly dry it out before adding it to the filling.
- Phyllo Dough – flaky and delicious phyllo dough is perfect for making perfect layers in the pie. I prefer phyllo dough to using puff pastry, so it’s flakier.
- Eggs – to hold the filling together.
- Feta cheese – for an authentic recipe, use Dodoni feta cheese. The feta filling is the best part of this traditional Greek spinach pie.
- Nutmeg – to give it a hint of spice.
- Black Pepper – for flavor
- Fresh Dill – gives the filling it’s signature earthy flavor.
- Unsalted Butter – to brush between the the layers of phyllo dough.
How To Make This Greek Spinach Spanakopita Pie
- Take your leeks and remove tough green leaves, and the roots at the very bottom. Wash thoroughly.
- In a large pan, heat the olive oil over medium head. Add the cleaned leeks, green onions, parsley, add the spinach and sauté for 7 to 8 minutes until vegetables begin to soften. Remove any excess liquid.
- In a large bowl (or stand mixer) add the feta cheese, pepper, nutmeg, and eggs. Mix well to combine. Add in the cooked leek and spinach mixture, and mix again. Stir in the chopped dill.
- Preheat oven to 375 degrees Fahrenheit. Grease a 13×9 baking dish, and layer 10 sheets of the phyllo dough to the bottom, buttering each sheet of phyllo dough with the melted butter.
- Add the spinach, feta, and leek filling.
- Top the spinach filling with the 10 remaining sheets of phyllo dough, again buttering each layer.
- Bake for 40-50 minutes, or until phyllo dough turns golden brown. Once finished, remove the spanakopita from the oven and allow to cool at room temperature before slicing with a sharp knife.
Store leftovers in an airtight container, and refrigerate for up to 3 days.
Frozen Spinach Recipes
You can use fresh spinach, or frozen chopped spinach in the spanakopita filling. Frozen produce is a great option for finding fresh and flavorful vegetables in the off season. By using ingredients from the freezer section, I can stock up when they are on sale, and use them in all kinds of great dishes. It saves me a trip to the store, and I can add amazing veggies right into the recipe.
