This authentic spanakopita recipe is flaky and flavorful, with layers of spinach, leeks, herbs, and phyllo dough. A fantastic classic Greek recipe that makes a great dinner or holiday meal.
Take your leeks and remove tough green leaves, and the roots at the very bottom. Wash thoroughly, then thinly slice and set aside.
In a large pan, heat the olive oil over medium heat. Add the cleaned leeks, green onions, parsley, add the spinach and sauté for 7 to 8 minutes until vegetables begin to soften.
In a large mixing bowl (or stand mixer) add the feta cheese, pepper, nutmeg, and eggs. Mix well to combine. Add in the cooked leek and spinach mixture, and mix again. Stir in the chopped dill.
Preheat oven to 375 degrees Fahrenheit. Grease a 13x9 baking dish, and layer 10 sheets of phyllo dough on the bottom of the greased baking dish, brushing each sheet generously with melted butter before adding the next.
Add the spinach, feta, and leek filling to the bottom layers of phyllo dough.
Top with the 10 remaining sheets of phyllo dough, again buttering each layer.
Bake for 40-50 minutes, or until phyllo dough turns golden brown. Remove from oven once finished, and allow to cool before slicing.
