Beet salads are a wintertime favorite, especially when loaded with hearty walnuts and feta cheese, and topped with a bright and sweet dressing. This salad makes a fantastic holiday appetizer – it’s fancy enough for company, and you can make most of it ahead of time for easy salad prep.

The great thing about this recipe is that you can used canned or steamed beets, instead of cooking them yourself. I actually used canned for this recipe, but buying those packages of steamed beets in the produce section would also be great. Or steam your own!

What’s In This Beet and Walnut Salad Recipe?

Be sure to visit the recipe card below for full ingredient amounts and recipe instructions!

  • Sliced Beets – you can either use canned beets, packaged cooked beets, or steam them yourself! I used canned for this recipe.
  • Really Good Extra Virgin Olive Oil
  • Orange, juiced
  • Apple Cider Vinegar: which gives this dressing a little extra tang!
  • Dijon Mustard – for a really nice flavor and texture, this dijon is a favorite in our pantry. Use a good quality mustard, not yellow prepared mustard.
  • Sugar
  • Salt & Pepper
  • Walnuts
  • Feta Cheese – I used a crumbled feta for this recipe, but you can also use a block of feta cheese, mashed with a form before adding to the pan.
  • Basil

How Do I Make This Beet Salad with Feta Cheese

  1. Drain sliced cooked beets, set aside.
  2. In a medium bowl, add the dressing ingredients: olive oil, orange juice, apple cider vinegar, Dijon mustard, sugar, salt, and pepper. Mix well to combine. Place beets in the bowl, and allow the beets to marinate in the dressing for at least 1 hour (or overnight, if you want to prep this ahead of time)
  3. Once marinated, drain the beets, and place them on a serving plate. Top with walnuts, feta cheese, and julienned basil.  Drizzle additional extra virgin olive oil over the beets if desired.
