- Oranges – I used mandarins which are in season at the moment, but you can use any variety you like!
- Baby spinach
- Pepitas – another name for hulled pumpkin seeds, these pepitas add wonderful crunch and flavor to each bite of this tasty salad.
- Sesame Seeds – another tasty addition to add a nice texture to the dish.
- 5-Minute Orange Sesame Vinaigrette – made with extra virgin olive oil, toasted sesame oil, fresh orange juice, soy sauce, and rice vinegar for sweetness.
Equipment You’ll Need
This is a fairly simple recipe, so it doesn’t call for much equipment. You’ll need:
- A pot to cook the pasta
- A miximng bowl for tossing
- A juicer or citrus squeezer for the orange juice in the dressing
For the best fruit juice, I love using my easy clean slow juicer, which gets each delicious drop out of the fruit. It’s great for most fruits and larger peeled citrus!
If your looking for a great juicer, it’s quiet, simple to clean, and an excellent tool we use almost daily.
