- Peanut Butter: or you can substitute an almond or cashew butter instead. Like my peanuts, I only use unsalted peanut butter. Use a gluten free peanut butter.
- Raw Cacao Powder: this raw unsweetened cacao powder is a great addition to these cookies. Make sure you use a raw cacao powder and not sweetened baking cocoa… it makes a huge difference.
- Granulated Sugar
- Egg
The amazing thing about these cookies is that they are ready so quickly! I preheated the oven, and by the time it was ready, I had the dough made, formed, and the cookies ready on the baking sheet. Plus they use mostly pantry staple ingredients, so super friendly for those times when you haven’t been to the grocery store in a while.
What If I Don’t Have an Egg?
There are some fantastic pantry alternatives to an egg.
- Applesauce – substitute 1/4 of applesauce for each egg required in recipe
- Flax ‘egg’ – a classic vegan baking hack, mix 1 tablespoon flaxseed meal with 2 tablespoons of water, let sit for 1 minute
- Corn Starch – mix 1 tablespoon corn starch with 3 tablespoons water for each egg in recipe
How Do I Make These Chocolate Peanut Butter Cookies?
- Preheat oven to 350 degrees Fahrenheit (180 Celsius). Line a large baking sheet with parchment paper.
- In a large mixing bowl, add the cacao powder, peanut butter, sugar, and egg. Whisk until ingredients are well combined.
- Scoop about 1 tablespoon of dough, roll with hands, and place on the baking sheet. (I used a melon baller for consistent sized cookies). Repeat until dough is done.
- Once you have placed all the rolled dough balls on to the baking sheet, press down with a fork to form a pattern.
- Bake for 10-12 minutes, and remove from oven.
- Allow 10 minutes to cool before eating.
