Make Ahead French Onion Soup in the Appliance that Does it All
This vegetarian French onion soup is unbelievably easy to make ahead of time for your next date night, dinner party, or just a dinner gathering with friends. Using the Wolf Gourmet Multi-Function Cooker couldn’t be easier: you can brown the onions on the sauté mode, then switch to the slow cooker to gently simmer the onions for hours. The meal can be ready anytime you or your guests are!
This multi-cooker has so many amazing settings in one appliance. It can sauté and sear, steam rice, sous vide, slow cook, and you can even program your cooker to run more than one setting throughout the day. My favorite feature is the Meal Timer mode: you tell the appliance what time you want the recipe ready, and it will adjust the heat to get it finished! Now that’s one smart cooker!
What’s In This Meatless French Onion Soup Recipe?
- Butter – to sauté the onions in.
- Onions – I used large sweet Vidalia onions for this. Vidalia onions have a higher sugar content making them a fantastic choice to caramelize.
- White Wine – use a really good wine that you would drink or serve to guests. I used a pinot grigio for this recipe and it turned out great, but a chardonnay would also bring some amazing flavor to this soup.
- Garlic – for added flavor and depth.
- Herbs de Provence – a beautiful French spice blend of thyme, marjoram, savory, and lavender. It’s fantastic in soups, stews, and on roasted potatoes.
- Vegetable Stock – make your own or buy one lower in sodium so you can control the salt content of the soup.
- Salt and Pepper – to taste, your soup may not need either depending on the vegetable stock you use.
- Bread – I like a thick sourdough slice for the crouton.
- Gruyere Cheese – a sharp classic addition to French onion soup. If you can’t find gruyere you can add fresh mozzarella instead.
Easy Fancy Dinner Party Appetizers to Impress
Impress your guests with a bowl of this delicious soup as an appetizer or second course. It’s simple enough to prep on a weeknight, and elegant for company or for a special occasion. Homemade French onion soup couldn’t be easier to caramelize then slow cook in your multi-function cooker. Prep it anytime of day, and set the Meal Timer function so the soup is ready when your guests are!
How Do I Make French Onion Soup?
- Set your Wolf Gourmet Multi-Function Cooker to the ‘Sear/Sauté ‘ mode, then select ‘Medium’. Add the butter and the sliced onions, and sauté for 40 to 45 minutes until the onions have caramelized to a deep brown. Sauté with the lid removed, stirring the onions occasionally.
- Once the onions have caramelized, add the wine directly into the pan, and stir with a wooden spoon, scraping any brown bits off the bottom of the pan. Add the garlic, Herbs de Provence, and vegetable stock. Cover the pot, and switch the multi-cooker to Manual Mode. Select ‘Medium’ again, and slow cook for 2-3 hours until onions are soft and falling apart in the soup broth. Taste, and add salt and pepper if desired.
- Just before serving, slice your bread and place a heaping pinch of gruyere cheese on top. Place the bread and cheese under the broiler for 2-3 minutes until the cheese begins to brown and bubble.
- Serve the hot soup with a cheese toast on top of the soup, or on a place next to the soup, and garnish with fresh herbs.

- 2 tablespoons olive oil
- 4 tablespoons butter
- 3 lbs sweet onion peeled and thinly sliced
- 1 tablespoon herbes de provence
- 1 cup good white wine I used a pinot grigio
- 6 cups Vegetable Stock
- 4 Pieces Sourdough Bread
- 1/2 cup gruyere cheese grated, or mozzerella if you cannot find gruyere
Instructions
- Set your Wolf Gourmet Multi-Function Cooker to the 'Sear/Sauté ' mode, then select 'Medium'. Add the butter and the sliced onions, and sauté for 30 to 45 minutes until the onions have caramelized to a deep brown. Sauté with the lid removed, and stir occasionally.
