What’s In This Balsamic Roasted Peach Salad?

  • Ripe Peaches: you can use fresh peaches or even frozen peach wedges for this recipe.
  • Salad mix – you can use any salad blend you like, but I like a nice spring mix with red lettuce, radicchio, and peppery arugula.
  • Asparagus
  • Zucchini
  • Extra virgin olive oil
  • Balsamic vinegar – the natural sugars in balsamic give this dressing a nice tangy flavor. I used aged balsamic, but white balsamic vinegar is also nice if you can find it in grocery stores.
  • Lemon Juice
  • Whole Grain or Dijon Mustard – for a really nice flavor and texture, you can use either whole grain mustard, stone ground, or dijon… I’d stay clear from yellow prepared mustard for this recipe.
  • Fresh garlic cloves
  • Sea Salt & Black Pepper – a pinch of salt & pepper make this dressing pop.

Favorite Add-Ins for Serving

​Don’t stop at peaches, you can use a variety of stone fruits for this recipe like apricots, fresh cherries (pitted), or even nectarines.

  • Add thinly sliced red onion for extra flavor.
  • Get extra natural sweetness from cherry tomatoes, red peppers, or fresh blueberries.
  • Top with crunchy pine nuts or walnuts.
  • Top with cheese, if you’d like: feta cheese, a soft brie, or fresh mozzarella, creamy burrata, goat cheese, or crumbled blue cheese.

A Naturally Sweet Salad Dressing

The balsamic vinaigrette is super easy.  It takes 5 minutes to combine everything in a mason jar and just shake away!  

For a sweetener, I find that the balsamic vinegar has enough sweetness for me. But you can also add it some agave, maple syrup, or honey in the dressing as well.

How To Make A Grilled Peach Salad

  1. Heat up an outdoor grill or an indoor grill pan. Place the sliced peach halves across the grill grates, and grill for 5-6 minutes until the peaches have nice grill marks. Set on a plate, and slice peaches into bite-sized pieces.
  2. After the peaches, place the vegetables on the grill as well. Grill for 3-4 minutes or until the vegetables begin to have a nice char, then flipping. Set vegetables aside.
  3. Add all the peach salad dressing ingredients to a mason jar or small bowl.  Mix well to combine.
  4. To serve: add mixed greens to a large serving plate or serving bowl. Top with the sliced grilled peaches and vegetables on a bed of fresh greens, and dress with the salad dressing.  Top with a crumbled cheese and enjoy!
  5. Store leftover peaches or salad in an airtight container for up to 1 day.

You can serve this balsamic roasted vegetable salad either hot or cold!  Enjoy the warm veggies straight from the grill, or place in the refrigerator to cool overnight.

One great thing about this salad is that you can grill the peaches and vegetables when its cool at night, refrigerate, and then serve them over salad greens the next day! Or grill on the weekend and meal prep delicious salads for lunches during the week.

Ingredients
  

For the Salad

  • 2 peaches sliced
